Muruku/Chakli with bread

Bread slices 6 to 7
Rice flour 2 cup
Besan flour 1/2 cup
Sesame seeds 2 spn
Ajwan 2 spn
Chilli powder 2 spn or more
Hing 1/2 spn
Butter or ghee 1 spn
Salt as required
Oil for deep frying

Soak bread in water. Squeeze water completely and put it in a mixing bowl..
Add other ingredients except oil..
Add water little by little..
Knead well until it reaches muruku dough consistency..
Not too loose or too tight..
Make desired shape with muruku maker..
Deep fry in hot oil until it turns crispy..
Store it in air tight container after it cool down..
I used honey wheat bread.. we can use any kind of bread..

Plain Naan & Cheese naan

All purpose flour 2 cup
Yeast 1 tspn
Sugar 1 tspn
Salt as required
Oil 2 spn
Butter for butter naan
Cheese for cheese naan

Take 1/4 cup lukewarm water..
Put yeast and sugar ..
Mix it and keep aside for 5 minutes..

In a mixing bowl add flour , salt and oil..
Add the live yeast ..
Add required water nearly 3/4 cup ..
Knead well into a soft dough..
Keep it covered for 1 to 1.5 hours..
Now the dough will be double in size..
Make small balls..
Roll it gently..
Heat a pan..
Add the naan..
Once it starts bubbling turn around..
Make the heat high..
Leave it for a minute..
Now apply butter..
Sprinkle some cheese for cheese naan..
Depends on the flavor add it as topping like garlic naan etc..
It turns out really soft and tasty..
Can do it in oven too..

Serve hot with desired side dish…

Turkey kofta Gravy

For kofta
Minced Turkey 250g
Onion finely chopped 1/4 cup
Egg 1
Chilli powder 1 spn
Corriander leaves finely chopped 2 spn
Salt as required
Breadcrumbs 3 spn
Oil for deep frying

For gravy
Onion 2 finely chopped
Tomato 2 finely chopped
Ginger garlic paste 1 spn
Cinnamon 1 inch
Cloves 2
Cardamom 1
Star annise 1
Fennel seeds 1/2 spn
Coconut milk 1/4 cup
Chilli powder 1 spn
Turmeric 1/2 spn
Corriander powder 2 spn
Chicken masala or garam masala 1 spn
Salt as required
Oil 2 spn
Corriander leaves for garnishing

First prepare the kofta..
Mix all ingredients in a bowl..
Make small balls.. apply oil in palms to make balls..
Deep fry in medium flame until it turns golden brown..
Keep aside

Heat a pan
Add oil..
Add in cinnamon, cloves, cardamom, star annise, fennel seeds..
Give a fry..
Add onions fry until golden brown..
Add ginger garlic paste fry until raw smell leaves..
Add tomatoes fry until mushy..
Add in all spice powders and salt..
Fry in medium flame for a while ..
Add 1 cup water.. let it cook until the raw smell leaves..
Add fried kofta.. .
Add in coconut milk with 1 cup water..
Adjust water depends upon gravy thickness as required..
Cover and cook in medium flame for about 10 minutes..
Now oil separate from gravy..
Garnish with chopped coriander leaves..
Serve hot…

Yummy Turkey kofta gravy ready..
Same method we can do with chicken or any minced meat..

Backed Nachos with Corn Cheese & Veggies

Tortilla chips
Onion thinly sliced as required
Tomato diced as required
Bell peppers diced as required
Frozen corn as required
Grated Cheese as required desired kind of cheese
I used mozzarella
Salt and seasoning mix as required
Dipping sauce as required (optional)

Preheat oven for 425 f.
Take a baking tray…
Arrange tortilla chips..
Sprinkle veggies one by one as topping..
Sprinkle salt and seasoning mix..
Add sauces too if you are using..
I didn’t use any sauce..
Sprinkle grated cheese in the top ..
Bake for 12 to 15 minutes..
Serve hot..

Yummy nachos ready…

Onion chutney

Onion 2 roughly chopped
Kashmiri red chilli or regular red chili 4 to 5
Grated coconut 1 cup
Tamarind little bit
Jaggery 1/4 cup
Salt as required
Oil 1 spn
Mustard seeds & urad dhal 1/4 spn
Cumin seeds 1/4 spn
Curry leaves few

Grind onion, red chilies, coconut, tamarind, jaggery with salt..
Make coarse paste..
Heat oil in a pan
Add the seasoning items..
Pour it into the chutney.

Yummy tasty onion chutney ready..

Badam Halwa

Raw badam 1 cup
Sugar 1 cup
Ghee 1/2 cup
Milk 1/4 cup
Saffron 1/2 spn
Salt a pinch

Soak badam in hot water for half to 1 hour..
Remove the skin from badam and grind it with little water..
Don’t grind as fine paste.. it should be little coarse..

Heat milk in a nonstick pan
While milk boiling add the badam paste..
Mix well.. use medium flame..
When it start observing the milk add saffron..
Mix well for few minutes.. add 3 spn of ghee..
Add a pinch of salt..
While the raw smell leaves add in sugar..
Mix without stopping for 5 to 7 minutes..
Add the rest of the ghee..
Mix well until it comes to halwa consistency..
It will bind well with ghee and sugar..
At the end it will not stick with pan..
Remove and pour it into a serving bowl..
Garnish with thinly sliced badam and saffron..
Once it cool down badam halwa is ready to serve..

Gits ready Mix Moong Dhal Vada

Moong dhal vada ready mix pocket 1
Onion 1 finely chopped
Corriander leaves and mint leaves finely chopped 3 spn
Green chillies 3 finely chopped
Oil 2 spn

Mix vada mix with 200 ml water(check the water quantity backside of the box)..
Keep aside for 10 minutes ..
Add other ingredients mix well..
Make vada shape..
Deep fry in oil or
Air fry 375 deg f for 6 to 7 minutes..
Flip cook again for 5 minutes..
Brush oil if required..

Serve hot..

Rava ladoo

Rava 1 cup
Powdered sugar 3/4 cup
Cardamom powder 1 tspn
Cashew drygrapes ghee
Milk 3 to 4 tspn

Roast rava in low flame
Do not burn the rava while roasting
Put rava in mixi to make coarse ( if u use bombay rava) if the rava already small no need to grind in mixi
Add powdered sugar
Add cardamom powder
Roast cashew and drygrapes in ghee
Add everything in a bowl
Add warm milk
Mix everything
Make ladoos

All items shd be little hot until u mix them
