Capsicum Peanut Masala Rice

Rice 1 cup
Cook and make it cool completely

Capsicum 1 diced
Onion 1 finely chopped
Ghee 2 spoon (can add more for kids)
Mustard 1/4 spoon
Curry leaves few
Corriander seeds 2 spoon
Urad dhal 1 spoon
Peanut 2 spn
Red chillies 4 to 5
Jeera 1 spoon
Whole pepper 1/4 spoon
Salt as required

Roast corriander seeds, Urad dhal, peanut, red chillies, jeera, pepper with little oil..
Cool and grind it..
Masala ready

Heat a pan
Add ghee
Add mustard and curry leaves
Add onions fry until golden brown
Add the masala
Fry for 2 mins in medium flame
Add diced capsicum add salt
Fry for a minute
Add cooked rice
Fry until masala coated with rice

Brinjal Peanut Gravy

Brinjal 8 to 10
Tomato 2 if big ones or 3 small ones
Garlic 5 to 6
Roasted peanut 3 spn
Red chillies 8 to 10 soak in hot water
Curry leaves few
Tamarind juice thick 1/4 cup
Corriander powder 3 to 4 spn
Salt as required
Oil 3 spn

Grind tomatoes,peanut,red chillies, garlic, and curry leavesโ€ฆ
Slit the brinjals put it in water
Heat a pressure cooker
Add oil
Add brinjal fry for five minutes
Add the peanut paste which grinded already
Add tamarind juice, corriander powder, salt
Mix well
Add water not more than 2 cups
Pressure cook for 2 whistle
Or can cook in pan
Follow the same process until oil separate from gravy
Serve hotโ€ฆ

Perfect combo for biriyani, pulav , any variety rice ,simple rice or rotiโ€ฆ.

Turmeric 1/4 spn
Cooked rice 4 cups
Hing 1 pinch
Salt as required
Oil as required
Ghee 2 spn

For roast and grind

Corriander seeds 2 spn
Jeera 1 spn
Whole pepper 1 spn
Red chillies 6 to 7
Peanut 3 spn

Heat s spn of oil in a pan
Add the items for roast and grind
Fry until nice aroma comes
Let it cool down completely
Grind coarsely with hing

Cut the brinjals and put it in salt water

Heat ghee
Add onions fry until golden brown
Add brinjals
Add turmeric too
Cook in medium flame until brinjal 70% cooked
Add the masala powder
Add salt
Fry for few mins
Add cooked rice
Mix gentlyโ€ฆ

Peanut Chaat..

Peanuts 1 cup
Onion 1 chopped
Tomato 1 chopped
Raw mango 1/2 finely chopped
Chilli powder 1 spn
Chaat masala 1 spn
Salt as required
Corriander leaves for seasoning
Lemon juice 1 spn

Pressure cook peanuts with enough water
Drain the water
Mix all the ingredients in a bowl..
Adjust spice and tanginess..

Can add any veggies like carrots, cucumbers etc..

Capsicum 2 diced
Oil 2 spn
Cumin seeds 1 spn
Mustard seeds 1/4 spn
Split urad dhal 1/2 spn
Curry leaves few
Garlic 3 chopped
Turmeric 1/4 spn
Salt as required

For peanut mix
Dry grind the following ingredients
Roasted peanut 1/2 cup
Grated coconut 1/4 cup
Cumin seeds 1 spn
Chilli powder 2 spn
Garlic pods 4 to 5
Salt 1/4 spn

Heat oil in a pan
Add mustard seeds, split urad dhal, cumin seeds, curry leaves few..
Add garlic..
Fry well
Add in diced capsicum..
Give it a fry.. add turmeric powder and salt..
Cook until it becomes soft..
Add the peanut mix fry for 2 to 3 minutes..
Serve hot..
Perfect side dish for roti or rice..

Masala Peanuts Air Fryer

Peanut 1 cup (fresh dry peanut)
Besan flour 1/2 cup
Rice flour 2 spn
Corn flour 2 spn optional
Chilli powder 1 spn
Turmeric 1/2 spn
Ginger garlic paste 1 spn
Salt as required
Baking soda 1 pinch optional
Chat masala 1/2 spn optional
Oil 2 spn
Water 2 to 3 spn
Hing 1 pinch

In a mixing bowl add besan flour, rice flour, corn flour, chili powder, turmeric, salt, hing, baking soda..
Mix well.. add ginger garlic paste mix well..
Add the peanuts.. mix it..
Add oil too..
Add water little by little mix it..
Mix until the masala coated well with peanuts..
Arrange it in airfryer tray..
Keep 375 deg for 8 to 10 minutes..
Mix inbetween once..

Add chat masala once its done.. mix it and keep it in air tight container..

We can bake it too in ovenโ€ฆ or deep fry in oil..

Roasted peanuts 1 cup
Jaggery/vellam 1 to 2 spn
Onion 1 big diced or pearl onions 15 to 20
Tomato 2 medium size diced
Green chillies 2
Chilli powder 1 spn
Corriander powder 2 spn
Garam masala 1 spn
Salt as required
Oil 3 spn
Corriander leaves for garnishing

Grind roasted peanuts, Jaggery, oil 2 spn and little salt..
Don’t add water.. keep aside..
This is our peanut butter for the gravy..
Can use store bought peanut butter too..

Heat a pan
Add oil..
Add green chilies and onion..
Fry until onion turns translucent..
Add in tomatoes.. fry until mushy..
Add the spice powders now and peanut butter..
Fry for 1 minute..
Add 1 cup water and salt too..
Add water depends on thick or thin gravy as you desire..
Cover and cook for 6 to 8 minutes in medium flame..
Now oil will separate from gravy..
Add finely chopped corriander leaves..
Serve hot..

This gravy goes with anything.. tiffin items as well as rice varieties .. even with biriyani too..
