Onion Muruku

Rice flour 1 cup
Urad dhal flour 1/4 cup
Onion 1 medium size
Red chillies 4 to 5
Sesame seeds 1 spn
Hing 1/4 spn
Ajwan seeds 1 spn
Salt as required
Melted Butter 1 spn
Oil for deep frying

Grind onion and red chillies into a fine paste..
In a mixing bowl add rice flour, urad dhal flour, onion chillies paste, Sesame seeds, hing, ajwan seeds, melted butter, required salt..
Mix it evenly..
Add water little by little and knead a soft dough..
Heat oil in a frying pan..
Use muruku maker to make shape..
Use desired shape..
Press directly in oil.. use medium high flame..
Remove once the bubbles stop from oil..
Break if you want..
Cool it and store it in a air tight container..
Spicy onion flavored muruku ready..

Kara Chutney (Spicy Onion Coconut Chutney)

Onion 1 big
Green chillies 3
Grated Coconut 1/2 to 1 cup
Tamarind a small piece
Chilli powder 1 spn
Salt as required
Jaggery 1/4 spn optional
Oil 2 spn

Heat oil in a pan..
Add onion and green chillies..
Fry until onion turns translucent..
Switch off flame..
Let it cool down..
In a mixi add Coconut, chilli powder, Tamarind, Jaggery and fried onion green chillies along with salt..
Add very less water..
Grind into coarse pasteโ€ฆ
Adjust salt and spiciness..
This chutney doesn’t need seasoning..
Quick and tasty kara chutney ready..

Radish chutney

Radish big 1
Onion 1
Tomato 1
Ginger 1 inch
Green chilli 2
Red chilli 2 or 1
Corriander seeds 1 spn
Channa dhal 1 spn
Urad dhal 1 spn
Jeera 1 spn
Tamarind few
Hing 1 pinch optional
Curry leaves few
Salt

Heat a pan
Add a spn of oil
Fry radish until half cooked
Keep it aside
Add oil again in the same pan
Add ginger
Add corriander seeds, channa dhal, urad dhal
Fry in medium flame
Add jeera and red chilli , curry leaves
Add green chillies too
Now add onion fry until translucent
Add tomato mash well

Keep it cool
Now add everything with the fried radish in the mixi or blender
Add tamarind and hing too
Add salt
Grind coarsely

Tomato is optional.. U can add more tamarind will give tangy taste..

Can season with mustard and curry leaves

Serve with rice , idli , dosaโ€ฆ๐Ÿ˜‹๐Ÿ˜‹

Pav bhajiโ€ฆ

Potato 2 big
Any veggies
Onion 1
Tomato 2
Ginger garlic paste 1 spn
Chilli powder 1 spn
Pav bhaji masala 1 spn
Butter
Salt
Bread

Peel the skin of potato and cut into cubes
Pressure cook potato along with all veggies with required water
Mash well
Heat a pan
Add butter
Add onion fry well
Add ginger garlic paste fry until raw smell leaves
Add chilli powder, pav masala powder
And salt
Add tomatoes
Fry until it becomes mushy
Add mashed veggies fry for five mins in medium flame
Now bhaji ready

Roast bread with ghee
Serve with corriander leaves ,onion and lemonโ€ฆ

Veggie kurma easy version

Mixed veggies ( carrot, beans, cauliflower, potato, or veggies of own choice) 2 cups
Onion 2
Tomato 1
Ginger garlic paste 1 spn
Whole spices ( bay leaves 1,cinnamon 1 inch, cloves 3, cardamom 1, fennel seeds 1 spn)
Green chilies 2
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala 1 spn
Cashew 10 to 12
Poppy seeds 2 spn
Turmeric 1/2 spn
Salt as required

Heat a pressure cooker
Add a spn of oil
Add the whole spices
When it spluttering add green chilies followed by ginger garlic paste
Add onion fry till golden brown
Add tomatoes fry until it mushy
Add turmeric and spice powders
Add all veggies
Fry for a while
Grind cashew and poppy seeds with some water
Add this paste into gravy
Check the salt
Add water depends the consistency of the gravy
Close the cooker and cook ..
One whistle is enough
Garnish with corriander leaves

Chinna Vengaya Kulambu (Small Onion Gravy)

Small onions 15 to 20
Garlic 6 to 7 optional
Whole pepper 1 spn optional
Fenugreek seeds 1 spn
Jeera 1 spn
Mustard 1/2 spn
Urad dhal 1/2 spn
Curry leaves few
Green chilies few
Ginger 1 inch
Spice powders ( turmeric 1/4 spn, chilli powder 1 spn, corriander powder 2 spn, fenugreek powder 1/2 spn)
Salt as required
Sesame oil 2 spn
Hing 1 pinch
Tamarind juice 1 cup

Heat a pan
Add oil and hing
Add mustard , urad dhal, whole pepper
Add finely chopped green chilies optional
Add Grated ginger optional
Once splutter add fenugreek seeds and jeera
Add curry leaves
Then add onion, garlic
Fry until translucent
Add all spice powders and salt
Fry for 2 minuets
Add tamarind juice and required water
Cover and cook in medium flame until oil separate from gravy

Perfect combo for rice with potato fry
Very good immunity developer for winter

Donโ€™t add much water ( not more than 2 cups)

Onion Pakoda in Airfryer

Onion 2 thinly sliced
Ginger 2 inch thinly sliced
Green chillies 3 finely chopped
Curry leaves and corriander leaves few finely chopped
Salt as required
Hot oil 2 spn
Besan flour 1 cup
Rice flour 1/2 cup
Baking soda 1/2 spn optional
Hing 1 pinch

Mix all ingredients except flours..
After mixing add besan flour, rice flour, baking soda.. and hot oil..
Make pakodas directly in air Fryer 375 deg for 12 minutes.. flip inbetween blush with oil if required..

Can add veggies or spinach too..
Serve hot with chutneysโ€ฆ

Kara Chutney (Spicy Onion Chutney)

Red chilies 6 to 8
Onion 2 cup peeled small onions
Can use big onions too (prefer red onions)
Garlic pods 5 to 6
Tamarind little bit
Salt as required
Sesame oil 2 spn
Mustard 1/4 spn
Cumin seeds 1/4 spn
Curry leaves few
Hing a pinch

Grind red chilies in a mixi
Add little water to make as chilli paste..
Add onion garlic tamarind and salt..
Don’t add water. Grind well ..
Transfer into a bowl..

Heat a pan
Add sesame oil
Add hing and mustard seeds and cumin seeds..
Add curry leaves..
Pour the seasoning in the chutney..
This goes with idli dosa well..
