Potato Bonda

Potato 2
Onion 1 finely chopped
Ginger 1 small piece
Fennel seeds 1/2 spn
Curry leaves few finely chopped
Corriander leaves few finely chopped
Green chillies 2 finely chopped
Turmeric 1/4 spn
Salt as required
Oil for deep frying
Besan flour 1 cup
Rice flour 2 spn
Chili powder 1 spn
Ajwan seeds or cumin seeds 1/2 spn
Hing 1/4 spm
Baking soda a pinch optional

Boil potatoes and peel of the skin..
Mash it and keep aside..
Heat 2 spn oil in a pan..
Add Fennel seeds and finely chopped ginger..
Add curry leaves and green chillies saute well..
Add onions..
Add salt..
Fry until translucent..
Add little turmeric ..
Fry again for a minute..
Add mashed potatoes and Corriander leaves..
Mix well..
Let it cool..
Meanwhile make batter for bonda..
In a mixing bowl add besan flour,rice flour,chilli powder, ajwan seeds, hing,baking soda a pinch,salt as required..
Add water little by little make it as thick consistency batter..

Now make small balls with potato masala..
Heat oil for deep frying..
Dip the potato balls in the besan batter..
Put it in hot oil..
Repeat the process..
Fry until all sides changes golden brown..
Serve hot with chutney or ketchup..

Zucchini Bonda

Zucchini grated 2 cup
Onion 1 finely chopped
Ginger thinly sliced 2 spn
Turmeric 1/4 spn
Chilli powder 1 spn
Besan flour 1 cup
Rice flour 1/2 cup
Baking soda a pinch optional
Hing a pinch
Salt as required
Curry leaves few
Corriander leaves few
Oil for deep frying

Mix all ingredients in a mixing bowl except oil..
Don’t add water..
Adjust the dough by adding besan flour and rice flour..
Make dough not too watery..

Heat oil in a kadai..
Take small amount of dough in hand..put gently in hot oil.. repeat the same..
Turn inbetween..
Let it cook until it turns golden brown..
Serve hot with coconut chutney or ketchup …
Yummy zucchini bonda ready…

Mangalore bonda/Goli bhajji

Maida/All purpose flour 1 cup
Rice flour 1/4 cup
Curd 1/2 cup
Baking soda 1/4 spn
Cumin seeds 1 spn
Green chillies 4 to 5 finely chopped
Onion 1 finely chopped
Ginger 1 inch or more finely chopped
Corriander leaves few finely chopped
Salt as required
Oil for deep frying

In a mixing bowl take all the ingredients except oil..
Pour water little by little..
Make it like a semi solid batter.
Keep it aside for 10 minutes..
Heat oil for deep frying…
Take little better make it like bonda..
Make sure oil is hot..
Fry until it turns golden brown..
Crispy outside yummy mangalore bonda ready..

Serve hot with coconut chutney and sambar…

Spinach bonda (keerai bonda)

Spinach 1 cup finely chopped
Besan flour 2 cups
Rice flour 2 spn
Chilli powder ( can replace green chilies)
Onion 1 finely chopped
Curry leaves few finely chopped
Hing 1 pinch
Salt as required
Oil for deep frying

Take all the ingredients in a mixing bowl except oil
Add water and mix well
The dough should not watery
It should be semi solid
Heat oil in a pan
Put the dough in the desired shape
Fry well until golden brown
Yummy bonda ready

Serve with coconut chutney or mint chutney or any chutneys
