Tomato Chapathi

Tomato 2
Wheat flour 2 cups
Fennel seeds 1 spn
Ginger 1 inch
Garlic 3 to 4 pods
Red chillies 3
Salt as required
Oil for sprinkle
Ghee 1 spn optional
Cumin seeds 1 spn
Curry leaves few finely chopped

In a mixi take Tomato, Fennel seeds, Ginger, garlic, red chilliesโ€ฆ
Grind into a smooth paste..
Pour it into a mixing bowl..
Add cumin seeds and curry leaves..
Add wheat flour and salt..
Mix well..
Add 1 spn oil or ghee..
Add water little by little..
Knead it into a soft dough like regular chapathi dough..
Let it sit for 5 to 10 minutes..
Make small balls..
Roll it flat and put it in not tawa..
Cook both sides .. Sprinkle oil both sides..
Once it cooked remove it from tawa..
Serve hot with coconut chutney or any mild gravy..
I used regular red chillies.. if it is kashmiri chillies chapathi will be in red color..
Yummy Tomato flavored chapathi ready..

Paneer Masala Roti

Paneer finely grated 1 cup
Wheat flour 3 cup
Ginger finely chopped 1 spn
Corriander leaves few
Cumin seeds 1 spn
Green chillies 2 to 3 finely chopped
Salt as required
Oil as required

In a mixing bowl add all ingredients except oil..
Add water little by little and knead it into a tight dough like chapathi dough..
Apply oil on the dough..
Keep it covered..
Let it sit for 10 minutes..
Make small balls ..
Roll it into thin roti’s..

Heat a tawa..
Cook the roti’s on the both sides ..
Sprinkle oil on both sides..
Remove from the tawa once its done..
Serve hot with desired gravy โ€ฆ

Puran Poli / Parupu Poli

All purpose flour / maida 1 cup
Salt a pinch
Turmeric powder 1/4 spn optional
Oil 3 spn
Ghee 2 spn

For stuffing
Split channa dhal 1/2 cup
Jaggery 1/2 cup to 3/4 cup
Cardamom powder 1/4 spn

In a mixing bowl add the flour , salt and turmeric..
Mix it roughly..
Add water little by little..
Knead it into soft dough..
Apply oil on the top..
Let it marinate with oil for 2 to 3 hrs..
Then only you will get soft poli..

Pressure cook channa dhal ..
Drain water and keep aside..
Mash the dhal .. Add jaggery mix it along with dhal in medium flame..
Cook it until it becomes tight ..
Add cardamom powder and mix it..
Let it cool down..

Take a small portion from the dough..
Stuff the prepared dhal inside the maida dough..cover it well..
Press it gently.. apply oil so that it will be easy to press..
Make it as thin as possible..
Heat a pan..
Add the prepared stuffed poli..
Cook in medium flame..
Apply ghee on both sides..
Flip it gently..
Cook until it turns golden yellow..
Don’t over cook. It become hard otherwise..
Store it and serve..
Yummy puran poli ready..

Drumstick leaves chapathi(Murungai keerai chapathi)

Wheat flour 2 cups
Jeera 1 spn
Drumstick leaves 1 cup
Salt as required
Oil as required

Take a blender
Mix wheat flour, jeera, drumstick leaves, with little salt
Add water litter by little
Maka a smooth dough
Make chapthi in pan
Add oil or ghee for making chapthis

This is iron rich food
Especially the kids who are not eating green leaves โ€ฆ.
Serve with kurma or simply curd๐Ÿ˜Š๐Ÿ˜Š

Ajwan paratha

Wheat flour or multigrain atta 3 cups
Ajwan 1 spn
Oil ghee as needed
Salt

Mix flour salt ajwan oil in a bowl
Add water little by little and make a smooth dough.. apply little oil on the top.. cover it..
Let it set for 15 mins atleast
Take a small ball size dough roll it like chapathi
Apply ghee on the top of it
Fold it into square shape
Like this make with how many count of paratha needed
Again roll it and cook it as like making chapathiโ€ฆ

Serve hot๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Chapathi Noodles with mixed veggies

Chapathi 4 cut into small pieces like noodles
Carrot , beans, potato finely chopped 1 cup
Peas 1/4 cup optional
Ginger garlic paste 1 spoon
Green chilies 3 finely chopped
Salt and pepper as required
Tomato ketchup 1 spn
Spring onions finely chopped 1/2 cup

Heat a pan
Add 1 spoon butter
Add ginger garlic paste and green chilies
Fry well
Add all veggies
Cook with little salt .. cover and cook in medium flame. No need to add water..
Add pepper 1/4 spn
Add spring onions saute for few minutes
Add tomato ketchup and mix well
Finally add chapathiโ€™s fry in high flame for 2 mins

Chapathi with Shahi Paneer

Paneer 1 cup cubed
Onion 1
Tomato 3
Ginger 1 inch
Green chilies 3
Butter or ghee 2 spn
Black elachi 1
Chilli powder 1 spn
Garam masala 1 spn
Turmeric 1/4 spn
Tomato sauce or puree 2 spn
Milk 1 cup
Cream 1/2 cup
Corriander leaves for garnishing

Heat a pan
Add a spn of ghee
Add elachi, green chilies, ginger, and onion
Fry until onion turns translucent
Add tomatoes fry until mushy
Cool completely
Make it as smooth paste
Add the paste in the pan
Add one more spn of ghee and add all spice powders and salt
Add tomato sauce too
Fry until the masala get cooked well
Add paneer cubes fry for 2 to 3 mins
Pour the milk slowly and the cream as well
Cook 3 to 4 mins just the milk get warm
No need to boil
Garnish with corriander leaves
Adjust milk for the consistencyโ€ฆ
No waterโ€ฆ,

Yummy shahi paneer ready ๐Ÿ˜‹๐Ÿ˜‹

Aloo Garlic Chilli Paratha

Wheat flour 2 cups
Milk 1/2 cups
Salt 1/8 spn
Oil as required

Boiled potato 2
Chili powder 1 spn
Grated garlic 2 spn

Warm the milk
Mix wheat flour, warm milk and salt
Make it as smooth dough
Add little oil too
Keep aside

Heat a pan
Add a spn of oil
Add garlic, chili powder and salt
Fry for a minute
Switch off the flame
Add boiled potato mix well
Stuffing ready

Now take the chapathi dough
Make a small small balls
Stuff the potato masala inside
Roll gently
Cook in chapathi pan with little oil or ghee
Make sure both sides cooked well
Cook in medium flame
