Brinjal Ghee Roast

Aubergine/brinjal 1 big
Onion 1 thinly sliced
Tomato 1 thinly sliced
Garlic pods 6 to 8 sliced
Cumin seeds 1 spn
Chili powder 1 spn
Sambar powder 1 spn optional
Turmeric 1/4 spn
Salt as required
Ghee 3 spn
Oil 2 spn optional
Jaggery a small piece

Cut brinjal and put it in water..
Keep aside..
Heat a pan
Add oil or ghee
Add Cumin seeds fry for a minute ..
Add garlic fry until it turns brown..
Add onions fry until golden brown..
Add tomatoes fry until mushy..
Add in spice powders and salt..
Fry for a minute..
Add in brinjal saute well..
Cover and cook in medium flame for 5 to 6 minutes..
Mix gently..
Adjust saltโ€ฆ add 2 spn of ghee..
Add Jaggery at end..
Cook for 1 minute..
Garnish with corriander leaves if required..
Yummy brinjal ghee roast ready..
Serve hot with rice or roti or tiffin items..

Bhagara baingan masala

Brinjal any type
Onion 1
Shahi jeera or jeera 1 spn
Turmeric powder 1/2 spn
Chilli powder 2 spn
Tamarind juice 1 cup
Oil 2 spn
Fenugreek seeds 1/4 spn
Ginger garlic paste 1 spn
Salt

Dry roast masala
Peanut 3 spn
Sesame seeds 2 spn
Coconut powder or dry coconut 3 spn
Dry roast and make it as paste

Heat oil in a pan
Add jeera
Add fenugreek seeds
Add onion fry until it turns to golden brown
Add ginger garlic paste
Fry well
Add turmeric
Now add brinjal and chilli powder together
Cover n cook for five mins in medium flame
Now add tamarind juice
Cook 2 to 3 mins
Now add the ground masala
Add water as per ur consistency
If u want thick add less water
Check salt
Now cover n cook for 10 mins until oil separate..
Garnish with coriander leaves

Stuffed Brinjal gravy(Ennai kathirikai kulambu)

Indiann eggplant ๐Ÿ† 10
Onion 1
Tomato 1 small
Turmeric 1/4 spn
Oil 2 spn
Salt
Tamarind juice 1 cup

For stuffing

Oil 1 spn
Corriander seeds 1 spn
Jeera 2 spn
Urad dhal 1 spn
Channa dhal 1 1/2 spn
Fenugreek seeds 1 spn
Red chillies 4 to 5
Onion 1
Tomato 2
Corriander leaves few
Coconut grated 3 spn

Heat a pan
Add oil 1 spn
Add corriander seeds, jeera, urad dhal, channa dhal, red chillies, fenugreek seeds
Fry in medium flame
Keep aside
In the same pan add onion, tomato and corriander leaves fry well until mushy
Add corriander leaves
Again fry well
Add coconut
Make it cool
Grind all together as smooth paste
Stuffing ready

Cut the eggplant in the middle
Stuff with this masala

Heat 2 spn of oil in a pan
Add jeera and onions
Fry well add tomatoes fry well
Add turmeric and salt
Now add the stuffed eggplant
Cover and cook
Turn in the middle of cooking
Make sure eggplant cooked well
Now add tamarind juice
And the remaining masala which we prepared for stuffing
Cook well until oil separate from the gravy
Adjust salt and tanginess..

Brinjal Masala Dry

Brinjal 2 medium size
Onion 2 finely chopped
Tomato 3 finely chopped
Ginger garlic paste 1 spn
Turmeric 1/4 spn
Chilli powder 1 spn
Corriander powder 2 spn
Garam masala or sambar powder 1 spn
Salt
Capsicum 1 diced optional
Oil 2 spn

Heat a pan
Add oil
Add ginger garlic paste
Add onions fry until golden brown
Add in tomatos
Fry until mushy
Add all spice powders
And salt fry well
Add diced brinjal
Cook in medium flame
Once 80% done add capsicum
Cook 5 more mins

Garnish with coriander leaves ๐Ÿƒ

Brinjal Peanut Gravy

Brinjal 8 to 10
Tomato 2 if big ones or 3 small ones
Garlic 5 to 6
Roasted peanut 3 spn
Red chillies 8 to 10 soak in hot water
Curry leaves few
Tamarind juice thick 1/4 cup
Corriander powder 3 to 4 spn
Salt as required
Oil 3 spn

Grind tomatoes,peanut,red chillies, garlic, and curry leavesโ€ฆ
Slit the brinjals put it in water
Heat a pressure cooker
Add oil
Add brinjal fry for five minutes
Add the peanut paste which grinded already
Add tamarind juice, corriander powder, salt
Mix well
Add water not more than 2 cups
Pressure cook for 2 whistle
Or can cook in pan
Follow the same process until oil separate from gravy
Serve hotโ€ฆ

Perfect combo for biriyani, pulav , any variety rice ,simple rice or rotiโ€ฆ.

Brinjal Peanut Rice

Brinjal 5 to 6
Onion 1 finely chopped
Ginger garlic grated 1 spn
Turmeric 1/4 spn
Cooked rice 4 cups
Hing 1 pinch
Salt as required
Oil as required
Ghee 2 spn

For roast and grind

Corriander seeds 2 spn
Jeera 1 spn
Whole pepper 1 spn
Red chillies 6 to 7
Peanut 3 spn

Heat s spn of oil in a pan
Add the items for roast and grind
Fry until nice aroma comes
Let it cool down completely
Grind coarsely with hing

Cut the brinjals and put it in salt water

Heat ghee
Add onions fry until golden brown
Add brinjals
Add turmeric too
Cook in medium flame until brinjal 70% cooked
Add the masala powder
Add salt
Fry for few mins
Add cooked rice
Mix gentlyโ€ฆ
