Mutton Biriyani (Dindukal style)

Lamb / Goat 500g
Onion 1
Tomato 1 optional
Ginger 1 inch
Garlic 10 pods
Green chilies 5
Biriyani spices (cinnamon, cloves, cardamom, cashew, bay leaves, stone flower, star anise, fennel seeds, corriander seeds)
Mint leaves and corriander leaves handful
Basmati rice 500 g
Turmeric 1/4 spn
Chili powder 2 spn
Curd 50g
Salt as required
Oil 3 tspn
Ghee 2 spn

Cut and clean the mutton keep aside..
Grind onion, ginger, garlic and green chilies and keep aside..
Dry grind all biriyani spices into a coarse powder..

Heat a nonstick or heavy bottom pan..
Add oil and ghee..
Add the onion paste..
Fry until raw smell leaves..
Add the biriyani spice powder 3 spn is enough..
Fry for 2 minutes in low medium flame ..
Add tomato.. fry until mushy..
Add turmeric ,chili powder and salt..
Fry again.. add curd now..
Saute until it melts.. add mutton pieces..
Fry in high flame until masala coat well..
Add mint and corriander leaves too..
Fry well..
Add 500 ml water now..
Cover and cook for 20 to 25 minutes in medium flame..
Soak the rice now..
After 25 minutes check salt add soaked rice..
Cover air tight and cook in low medium flame for 20 to 25 minutes..
Turn off and leave it for 10 to 15 minutes..
Serve hot with raita or salna..

Liver 150 g
Onion 1 big finely chopped
Green chilies 2
Ginger garlic paste 1 spn
Chilli powder 1 spn
Turmeric 1/2 spn
Fennel seeds powder 1 spn
Garam masala 1 spn
Salt as required
Pepper powder 1 spn
Curry leaves and corriander leaves for garnishingโ€ฆ

Heat a pan
Add oil 2 spn
Add onions and green chilies
Fry until onion turns brown color
Add ginger garlic paste fry well
Add all spice powders and liver as well
Add little salt
Cover andCook in medium flame
Add little water if required
Once 70% cooking done
Remove the cover
Add pepper powder
Fry until the gravy turns dry
Add curry leaves and corriander leaves at the end
Serve hot โ€ฆ.

Goat meat 1/2 kg
Red Onion 1 finely chopped
Tomato 2 finely chopped
Curry leaves few
Turmeric 1/2 spn
Chili powder 1 spn
Salt as required

Roast and grind

Poppy seeds 1 spn
Fennel seeds 2 spn
Whole pepper 1 spn
Cinnamon 1 inch
Cloves 2
Ginger 2 inch
Garlic 7 to 8 pods
Curry leaves few
Red chillies 4
Red Onion 1 chopped
Corriander seeds 1 1/2 spn
Jeera 2 spn
Coconut grated 1/4 cup
Oil 3 spn

First heat a spn of oil in a pan
Add the items one by one to roast and grind except coconut
Fry well until onions turn brown
Remove from flame
Cool completely
Add coconut and grind it into smooth paste

Heat oil in a pressure cooker or pan
Add onions and curry leaves
Fry until onions translucent
Add in tomatoes and turmeric little salt
Fry until tomatoes cooked well
Add goat pieces
Fry for five mins
Add the coconut masala
Add water too
Cook until goat cooked well
Will take 35 to 40 mins if cooking in pan
We can do pressure cooker also
Add less water if using pressure cooker

Finally garnish with coriander leaves

Yummy goat curry ready to serve
This will go with anything rice or idli dosa tooโ€ฆ

Lamb 1/2 kg
Onion 2 big ones
Tomato 1
Ginger big piece
Garlic 10 to 12 pods
Mutton masala (used home made mutton masala)
Can replace with any garam masala
Oil 2 spn
Mustard seeds and fennel seeds 1 spn each
Curry leaves few
Turmeric 1/2 spn
Chilli powder 1 spn
Salt as required
Correct leaves for garnishing

Heat oil in a pan
Add onion, tomato, ginger garlic
Fry until tomato becomes mushy
Add in mutton masala
Make it cool and grind to a fine paste..

Heat 1 spn oil in a pressure cooker
Add in mustard and fennel seeds
Add curry leaves
Add chopped and cleaned lamb or goat.
Add in salt and turmeric fry for few minutes
Add the masala paste and water as required
Check salt and pressure cook for 3 whistles..
Once its done add finely chopped corriander leaves for garnishing..

This gravy goes with rice roti or any tiffin item too..
