Simple and delicious cauliflower cashew gravy

Heat oil in pressure cooker
Put oil
Bay leaves, cloves, cardamom, cinnamon
Add onion
Ginger garlic paste
Tomato
Green chilli
Then fry well
Add cauliflower
Turmeric

Grind cashew and fennel seeds
Add the paste
Add little water
Check the salt and spice
If u want more spice add chilli powder
Close the lid
Once its done garnish with corriander leavesโ€ฆ

Perfect combo for roti or chapathiโ€ฆ

Veg Cutlet

Potato 2
Carrot beans peas cauliflower
Any veggies of ur choice 1 cup
Ginger paste1 spn
Chopped corriander leaves few
Chilli powder 1 spn
Salt
Besan flour 3 spn
Bread gram 1 cup

Oil for shallow fry

Pressure cook all veggies
Mash well
Add salt, corriander leaves, ginger paste, chilli powder, salt, and bread gram mix well
Make it as dough
Leave some bread gram for coating

Now take small amount of dough make a shape u desire
Dip in besan ( mix besan with water)
Now coat with bread gram
Shallow fry until it turns golden brown on both sides..
Serve with chutney or ketchup ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

If the dough is watery add poha( aval) powderโ€ฆ

Gobi 65 or Chilli Gobi my style

Cauliflower 1 medium size
Rice flour 1/4 cup
Corn flour 1 spn
Chilli powder 2 spn
Hing 1/4 spn
Baking powder 1 pinch optional
Salt
Oil for frying

Cut the cauliflower gently
Clean with hot water and salt
Boil it for five mins
Or microwave for 3 to 4 mins
Mix all the other ingredients in a bowl
Add the microwaved cauliflower in the powder n mix well
No need to add water bcoz already cauliflower leave some water
Fry it in hot oil until it becomes crispy

Serve with onion and lemon๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Veggie kurma easy version

Mixed veggies ( carrot, beans, cauliflower, potato, or veggies of own choice) 2 cups
Onion 2
Tomato 1
Ginger garlic paste 1 spn
Whole spices ( bay leaves 1,cinnamon 1 inch, cloves 3, cardamom 1, fennel seeds 1 spn)
Green chilies 2
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala 1 spn
Cashew 10 to 12
Poppy seeds 2 spn
Turmeric 1/2 spn
Salt as required

Heat a pressure cooker
Add a spn of oil
Add the whole spices
When it spluttering add green chilies followed by ginger garlic paste
Add onion fry till golden brown
Add tomatoes fry until it mushy
Add turmeric and spice powders
Add all veggies
Fry for a while
Grind cashew and poppy seeds with some water
Add this paste into gravy
Check the salt
Add water depends the consistency of the gravy
Close the cooker and cook ..
One whistle is enough
Garnish with corriander leaves

Gd combo for roti, paratha and pulav dishes

Cauliflower broccoli capsicum dry version

Cauliflower 1 cup
Broccoli 1 cup
Onion 1 optional
Capsicum 1 diced
Fennel seeds powder 1 spn
Turmeric 1/2 spn
Chilli powder 1 spn
Oil 2 spn
Salt

Heat oil in a pan
Add fennel seeds powder
Add onions
Fry until golden brown
Add capsicum and broccoli
Fry with little salt and sprinkle some water if needed
Once half cooked add turmeric and chilli powder salt
Fry in medium flame until veggies become crispy
Add capsicum at the end fry for five mins

Serve hotโ€ฆ.

Cauliflower Pakoda..

Cauliflower 1 cup
Gram flour 1/2 cup
Corn flour or rice flour 1 spn
Chilli powder 1 spn
Fennel seeds powder 1/4 spn
Hing 1 pinch
Baking soda a pinch
Salt
Oil for deep frying

Clean the cauliflower well
Cook cauliflower 10%
I kept in microwave oven for five mins
Mix all the powders without water
Put the mix into the quarter cooked cauliflower
Mix well
Sprinkle water if need
Deep fry in oil

Serve hot with ketchup or chutney ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Oven Baked Cauliflower Chilli

Cauliflower 1

Chilli powder 1 spn
Corn flour or besan flour 1 spn
Hing 1 pinch
Ginger garlic paste 1 spn optional
Salt as required
Olive oil 2 spn or can use any oil

Cut and clean the cauliflower

In a mixing bowl mix all the ingredients
Make it as smooth paste
Add cleaned cauliflowers
Mix well
Preheat oven for 400 deg
Bake for 35 to 40 mins

Crispy cauliflower chilli ready
If u want more crispy leave it for few more minutesโ€ฆ ghee can be used instead of oil if its for kidsโ€ฆ
Serve with ketchup or side for fried rice ๐Ÿฒ

Cauliflower Pepper Curry

Cauliflower 1
Onion 1
Tomato 2
Cinnamon 1 inch
Cloves 2
Fennel seeds 1/2 spn
Curry leaves few
Mustard 1/2 spn
Turmeric 1/2 spn
Salt as required
Oil 2 spn
Corriander leaves for garnishing

To grind
Red chillies 4
Whole pepper 1/2 spn
Fennel seeds 1 spn
Corriander seeds 1 spn
Add 1/2 cup water and grind as smooth paste

Clean cauliflower with boiling water and salt turmeric
Heat a pan
Add oil
Add mustard, then cinnamon, cloves, fennel seeds and curry leaves
Add finely chopped onions
Fry until translucent
Add tomatoes fry until mushy
Add turmeric and salt
Add cleaned cauliflower fry for few minutes
Add masala paste
Cover and cook until oil separate from gravy
Finally add chopped corriander leaves

Cauliflower Roastโ€ฆ

Cauliflower 1
Onion 2 thinly sliced
Tomato 1
Ginger garlic finely chopped 1 spn each
Chilli powder 2 spn
Turmeric 1/4 spn
Chicken masala 1 spn optional (garam masala can be used instead of this)
Salt as required
Cinnamon 1 inch
fennel seeds 1 spn
Oil 2 spn
Corriander leaves for garnishing..

Cut and clean cauliflower and keep aside
Heat oil in a pan
Add in cinnamon and fennel seeds
Add ginger and garlic fry for few seconds
Add in onions fry well until translucent
Add in spice powders fry for a minute
Add tomatoes followed by cauliflower..
Add salt too
Cover and cook in low flame
No need to add water
Once 70% cooked remove the lid
Cook in high flame for few minutes until it turns dry n roast..
Garnish with coriander leaves..

Perfect combo for chapati or any variety rice โ€ฆ can use this roast for cauliflower masala dosa tooโ€ฆ

Bread Manchurian in Air Fryer

Bread 3 slices any kind
Cabbage 1 cup finely chopped
Carrot 1 cup grated
Kashmiri chilli powder 2 spn
Hing a pinch
Corn flour 1/4 cup
Ginger thinly sliced 1 spn
Water 2 to 3 spn
Oil just for brushing

Grind the bread sliced in a mixi until it become fine powderโ€ฆ
Add in all other ingredients mix well
Knead well make it as fine smooth dough..
Don’t make it too tight..
Make small balls..place the balls directly in airfryer

Cook in Air fryer 375 deg 12 to 15 minutes
Flip inbetween and blush with oil..
Adjust 2 to 3 minutes until the ball becomes crispy..

Season like manchurian.. i did a simple seasoning with capsicum onion and ketchupโ€ฆ
