Dhal greens curry / Thandukeerai kootu without coconut

Mixed dhal ( Toor dhal, moong dhal, channa dhal) 1 cup
Any greens 1 bunch ( i used thandukeerai)
Onion 1 diced
Tomato 1 finely chopped
Garlic 8 pods
Green chilies 3
Red chilies 3
Curry leaves few
Cumin seeds 1 spn
Mustard seeds 1/2 spn
Turmeric powder 1/2 spn
Pepper powder 1/2 spn
Hing 1/2 spn
Ghee 1 spn
Oil 2 spn
Salt as required

Pressure cook dhal and a pinch of turmeric , few drops of oil ,with 2 cup of water.
Keep aside.
Heat a pan,
Add oil..
Add mustard seeds and cumin seeds ..
Add red chilies and curry leaves..
Add garlic pods roast it..
Add onions fry until translucent..
Add tomatoes fry until mushy..
Add green chilies..
Add turmeric powder, pepper powder and salt..
Saute well..
Add the chopped greens/ keerai..
Cook for 5 minutes until water evaporates ..
Add cooked dhal..
Adjust the consistency of the curry..
Donโ€™t add more water..
Let in boil in medium flame for 5 minutes..
Add ghee and hing at the end..
Turn off and serve hot..

Gongura Chutney [spinach]

Gongura(pulicha keerai) 1 bunch
Onion 1 big
Garlic 4 pods
Ginger 1 small piece
Green chili 2
Red chili 4
Whole black pepper 1 spn
Cumin seeds 1 spn
Coconut grated 1/2 cup optional
Sesame oil or regular oil 2 spn
Mustard seeds 1/4 spn
Curry leaves few
Hing 1/4 spn
Salt as required

Clean the gongura leaves..
Heat 1 spn oil in a pan
Add ginger, garlic , green chili and red chilies..
Add cumin seeds and pepper too..
Fry for few minutes..
Add onions fry until translucent..
Add the gongura leaves..
Fry until it shrink..
Turn off flame..
Add coconut , salt and cool completely..
Grind it into smooth paste.. add little water if required..
Heat 1 spn oil in a pan
Add hing and mustard seeds
Add curry leaves..
Pour this into the chutney..
Mix well..
Ginger and garlic also optional..
We can add a tomato too for different flavour..
This will go with rice , idli dosas, also for chapathi too..

Spinach Poori

Wheat flour or multigrain atta 3 cups
Rava/Sooji 1/2 cup
Salt 1/2 spn
Spinach 1 bunch
Sugar 1/2 spn optional
Oil as required

Take a blender put the spinach and blend well
If u don’t hav blender use mixi to blend
Add wheat flour, salt, sooji, sugar..
Knead well
Make it as poori dough
Apply oil to keep the moisture ..
Make small balls ..
Meanwhile Keep the oil hot enough in a kadai..
Roll the balls into fine shape..
Deep fry both sides until it cooks well..
Serve hot with desired gravy..

Spinach Pongal

Spinach 1 bunch finely chopped
Raw rice 1 cup
Moong dhal 3/4 cup
Ginger 1 inch finely chopped
Green chillies 4 to 5
Milk 1/2 cup
Cumin seeds 1 spn
Whole black pepper 1 spn
Ghee 3 spn
Mustard seeds 1/2 spn
Cashew 7 to 8 chopped or whole
Curry leaves few
Salt as required

Heat a pressure cooker or instant pot..
Add the rice , dhal , spinach, ginger , green chilies and salt..
Add water 5 to 6 cups and milk too..
Check salt..
Pressure cook for 2 whistle ..
If instant pot keep pressure cooker mode for 4 to 5 minutesโ€ฆ

Once its done mash it..
Heat a pan..
Add ghee..
Add mustard seeds, cumin seeds, cashews, whole pepper.. fry in medium flame until cashew cooked well..
Add curry leaves too..
Mix it with prepared pongal..
Serve hot with sambar and coconut chutney..

Spinach pulav

Rice 1 cup
Butter 2 spn
Spinach 1 bunch
Onion 1
Jeera 1 spn
Green chilli 2
Garlic 5 pods finely chopped
Salt as per need

Cook rice with two cups of water and a spn of ghee with little salt
Make it cool

Heat a pan
Add ghee
Add jeera followed by onion and garlic
Fry golden brown
Add spinach cook it without water
Chk salt
Now add the cooked riceโ€ฆ
Fry gently
Serve hot๐Ÿ˜‹๐Ÿ˜‹
Can garnish with fried cashewsโ€ฆ

Spinach bonda (keerai bonda)

Spinach 1 cup finely chopped
Besan flour 2 cups
Rice flour 2 spn
Chilli powder ( can replace green chilies)
Onion 1 finely chopped
Curry leaves few finely chopped
Hing 1 pinch
Salt as required
Oil for deep frying

Take all the ingredients in a mixing bowl except oil
Add water and mix well
The dough should not watery
It should be semi solid
Heat oil in a pan
Put the dough in the desired shape
Fry well until golden brown
Yummy bonda ready

Serve with coconut chutney or mint chutney or any chutneys

Easy Spinach Curry

Spinach 1 pack (250g)
Onion 1
Tomato 1
Turmeric 1/2 spn
Tamarind little
Garlic 4 to 5 pods
Jeera 1 spn
Crushed pepper 1/2 spn
Red chilies 2 to 3
Salt
Hing a pinch
Oil , mustard, curry leaves for seasoning

Take all ingredients in a cooking vessel with little water and a spn of oil
Cover and cook until spinach cooks well
Adjust water if need
Add hing before blending
Once done add salt and blend it well

Heat another pan
Add oil
Mustard and curry leaves
Pour it into gravy

Yummy spinach curry ready
Can do the same process for other leaf ๐Ÿƒ too

Palak Paneer

Spinach 1 bunch
Paneer cubes 1 cup
Onion 1 finely chopped
Tomato 2 finely chopped
Turmeric 1 pinch
Corriander powder 1 spn
Salt as required
Ghee 3 spn
Green chillies 5
Cardamom 1
Cloves 2
Whole pepper 1 spn
Jeera 1 spn
Cinnamon 1 inch
Dry methi 1 pinch
Milk 1/4 cup

Boil paneer cubes in hot water
Keep it in the hot water until adding paneer in the gravy

Heat a pan
Add little ghee
Fry cardamom, cloves, whole pepper, cinnamon, jeera
Grind as coarse
Keep aside

In the same pan add spinach
Fry until water evaporates
Cool completely
Grind with green chillies

In the same pan add a spn of ghee
Add onions
Fry well
Add turmeric and corriander powder
Fry for few minutes
Add in tomatoes
Add crushed methi leaves
Fry until tomato turns mushy
Add spinach paste
Cover cook until oil separate from gravy
Add paneer cubes
Add in milk
Mix well
Finally add grind powder
Cook for few minutes

Serve with roti or pulavโ€ฆ

Spinach Pakoda

Spinach 1 cup finely chopped
Onion finely chopped 1
Ginger grated 1 spn
Garlic grated 1 spn
Besan flour 1 cup
Rice flour 1 spn or cornflour
Chilli powder 1 spn
Hing a pinch
Salt as required
Oil for deep frying

Mix all ingredients with little water
Make it as tight dough

Heat oil for deep frying
Make small balls or any shape
Fry until golden brown

Simple Spinach Pulav

Spinach 1 bunch
Basmati or sona masuri rice 1 cup
Ginger garlic paste 1 spn
Onion 1 thinly sliced
Tomato 1 diced
Green chili 5
Cumin seeds 1 spn
Bayleaves 1
Cinnamon 1
Cloves 2
Cardamom 1
Ghee or oil 2 spn
Salt as required

Heat ghee or oil in a pressure cooker.. i did it in instant pot
Add bay leaves , cinnamon, cloves, cardamon
Fry for a minute
Add onions fry until translucent
Add ginger garlic paste
Fry until raw smell leaves
Add tomatoes fry for few minutes..
Add spinach now fry until water evaporates..
Add soaked rice water and salt..
Pressure cook 1 whistle in medium flame..
In ip keep rice mode low pressure for 8 minutes..
All done..
Serve hot with gravy or raithaโ€ฆ
