Tomato Chapathi

Tomato 2
Wheat flour 2 cups
Fennel seeds 1 spn
Ginger 1 inch
Garlic 3 to 4 pods
Red chillies 3
Salt as required
Oil for sprinkle
Ghee 1 spn optional
Cumin seeds 1 spn
Curry leaves few finely chopped

In a mixi take Tomato, Fennel seeds, Ginger, garlic, red chilliesโ€ฆ
Grind into a smooth paste..
Pour it into a mixing bowl..
Add cumin seeds and curry leaves..
Add wheat flour and salt..
Mix well..
Add 1 spn oil or ghee..
Add water little by little..
Knead it into a soft dough like regular chapathi dough..
Let it sit for 5 to 10 minutes..
Make small balls..
Roll it flat and put it in not tawa..
Cook both sides .. Sprinkle oil both sides..
Once it cooked remove it from tawa..
Serve hot with coconut chutney or any mild gravy..
I used regular red chillies.. if it is kashmiri chillies chapathi will be in red color..
Yummy Tomato flavored chapathi ready..

Tomato curry / Thakkali Bajji

Tomato 2 diced
Onion 1 medium size roughly chopped
Green chillies 4 to 5
Garlic pods 5 to 6
Ginger 1 inch optional
Fennel seeds 1 spn
Turmeric 1/4 spn
Oil 2 spn
Mustard seeds 1/4 spn
Cinnamon 1 small piece
Cloves 2
Curry leaves few
Salt as required
Grated coconut 2 spn optional

Heat oil in a kadai..
Add oil..
Add mustard seeds..
Add in fennel seeds, cinnamon and cloves..
Saute it..
Add green chilies, garlic, ginger and curry leaves..
Fry for 1 minute..
Add onions now.
Saute until translucent then add tomatoes..
Add in turmeric and salt too..
Fry for a minute..
Add 1.5 cup water. If you want thick gravy add less than 1 cup water..
Cover and cook for 4 to 5 minutes..
Switch off flame..
Blend well or mash it altogether..
Adjust salt..
Yummy thakali bajji ready..
This will go with anything like rice or roti even idli dosa tooโ€ฆ
Its one of the recipe which we often prepare during tomato harvesting season in my hometown..

Tomato chutney

Tomato 2
Onion 1
Green chilli 1
Red chilli 2
Ginger small piece
Tamarind small piece
Corriander seeds 1 spn
Urad dhal 3 spn or channa dhal
Corriander leaves few curry leaves few
Oil 1 spn
Coconut 1/2 cup optional

Heat oil in a pan
Add corriander seeds and urad dhal
Add ginger followed by red chilli and green chilli
Add onion
Fry until translucent
Add tomato
Fry well
add corriander and curry leaves
Fry until tomato becomes mushy
Add tamarind and coconut at the end
Check salt
Make it cool
Grind coarsely
Season with mustard and curryleaves

Serve with idli dosa

Common batter for idli dosa and paniyaram oothapam

Idli rice 4 cups
Urad dhal 1 cup
fenugreek seeds 2 spn
Poha ( aval) 1 cup optional

Soak everything seperaely for atleast 4 hrs

Grind urad dhal
Keep aside
Grind rice, fenugreek seeds, poha together
Mix these batter with salt as required
Fermente overnight

Ur dough readyโ€ฆ

Radish chutney

Radish big 1
Onion 1
Tomato 1
Ginger 1 inch
Green chilli 2
Red chilli 2 or 1
Corriander seeds 1 spn
Channa dhal 1 spn
Urad dhal 1 spn
Jeera 1 spn
Tamarind few
Hing 1 pinch optional
Curry leaves few
Salt

Heat a pan
Add a spn of oil
Fry radish until half cooked
Keep it aside
Add oil again in the same pan
Add ginger
Add corriander seeds, channa dhal, urad dhal
Fry in medium flame
Add jeera and red chilli , curry leaves
Add green chillies too
Now add onion fry until translucent
Add tomato mash well

Keep it cool
Now add everything with the fried radish in the mixi or blender
Add tamarind and hing too
Add salt
Grind coarsely

Tomato is optional.. U can add more tamarind will give tangy taste..

Can season with mustard and curry leaves

Serve with rice , idli , dosaโ€ฆ๐Ÿ˜‹๐Ÿ˜‹

Pav bhajiโ€ฆ

Potato 2 big
Any veggies
Onion 1
Tomato 2
Ginger garlic paste 1 spn
Chilli powder 1 spn
Pav bhaji masala 1 spn
Butter
Salt
Bread

Peel the skin of potato and cut into cubes
Pressure cook potato along with all veggies with required water
Mash well
Heat a pan
Add butter
Add onion fry well
Add ginger garlic paste fry until raw smell leaves
Add chilli powder, pav masala powder
And salt
Add tomatoes
Fry until it becomes mushy
Add mashed veggies fry for five mins in medium flame
Now bhaji ready

Roast bread with ghee
Serve with corriander leaves ,onion and lemonโ€ฆ

Tomato Rasam

Tomato 2 big size
Onion 1 finely chopped
Ginger 1 inch finely crushed
Garlic 4 pods finely crushed
Both ginger and garlic optional
Mustard seeds 1/4 spn
Urad dhal 1/4 spn
Jeera 1/2 spn
Curry leaves few
Tamarind juice 1/4 cup optional or can be reduced
Chilli powder 1/2 spn
Pepper 1/4 spn
Turmeric 1/4 spn
Salt as required
Hing 1 pinch
Corriander leaves for garnishing

Heat a spn of oil in a kadai
Add mustard seeds
Once it splutter add urad dhal
Followed by hing
Add jeera curry leaves one by one
Add onion fry until golden brown
Add tomato fry until mushy
Add chilli powder turmeric powder and salt
Add the tamarind juice as well
Add water as per the tanginess of the rasam
Add pepper
Check the salt
Cover and cook in medium flame
Once it started bubbling switch off the stove
Garnish with coriander leaves
Can add rasam powder for flavor but it’s optionalโ€ฆ
Serve hotโ€ฆ.

Veggie kurma easy version

Mixed veggies ( carrot, beans, cauliflower, potato, or veggies of own choice) 2 cups
Onion 2
Tomato 1
Ginger garlic paste 1 spn
Whole spices ( bay leaves 1,cinnamon 1 inch, cloves 3, cardamom 1, fennel seeds 1 spn)
Green chilies 2
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala 1 spn
Cashew 10 to 12
Poppy seeds 2 spn
Turmeric 1/2 spn
Salt as required

Heat a pressure cooker
Add a spn of oil
Add the whole spices
When it spluttering add green chilies followed by ginger garlic paste
Add onion fry till golden brown
Add tomatoes fry until it mushy
Add turmeric and spice powders
Add all veggies
Fry for a while
Grind cashew and poppy seeds with some water
Add this paste into gravy
Check the salt
Add water depends the consistency of the gravy
Close the cooker and cook ..
One whistle is enough
Garnish with corriander leaves

Gd combo for roti, paratha and pulav dishes

Tomato Thokku

Tomato 6
Curry leaves few
Turmeric 1/2 spn
Chilli powder 2 spn
Sambar powder 2 spn
Salt as required
Hing 1/4 spn
Mustard and urad dhal 1 spn
Fenugreek powder 1 spn
Jaggery 1 spn
Sesame oil 3 to 4 spn

Heat a pan
Add sesame oil
Add mustard, hing and curry leaves
Add in tomatoes
And spice powders and salt too
Cook well until tomatoes cooked well
Once oil started separating from gravy add fenugreek powder and jaggery powder
Cook for few mins

Yummy thokku ready
Goes with idli dosa rice roti even with bread too ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Tomato Bath & Chicken Handi

Tomato 2
Onion 1
Ginger garlic paste 1 spn
Capsicum 1/2 diced optional
Mint corriander leaves handfull chopped
Coconut oil 2 spn
Dry grinded biryani spices powder 2 spn
Basmati rice 1 cup
Chilli powder 2 spn
Garam masala 1 spn optional
Coconut milk 1/2 cup
Salt as required

Heat coconut oil in instant pot or pressure cooker
Add the biriyani spices powder
Add in onions fry until translucent
Add ginger garlic paste
Fry until raw smell leaves
Add tomatoes fry until mushy
Add chili powder and garam masala
Add rice coconut milk and 1 cup water
Add in mint corriander leaves
Check salt
In ip rice mode keep low pressure for 8 minutes.. if its pressure cooker medium flame 1 whistle is fine..
Serve hot with raita or gravyโ€ฆ

Chicken Handi

Chicken 1/2 kg
Onion 1
Ginger garlic paste 1 spn
Tomato 1
Ginger thinly sliced 1 spn
Green chilli or capsicum 1/2 cup chopped
Turmeric 1/4 spn
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala or chicken masala 1 spn
Curd 1/2 cup
Salt as required
Dry Kasuri methi leaves 1/2 spoon crushed
Oil 2 spn

Heat oil in a pan
Add ginger garlic paste
Add in onion fry for a minute
Add in chicken fry until chicken turns white
Add in tomato and spice powders..add little salt..and 1 cup water
Cover and cook for 10 minutes
Add curd now
And kasuri methi leaves too..
Add thinly sliced ginger and green chili or capsicum.. cook for 1 minute..
Fry until oil separate from gravy..
