Mini Paneer and Chicken Bites

Mini Panner
Chicken Bites

Paneer diced 1 cup
Boneless Chicken diced 1 cup
Rice flour 2 spn
Corn flour 3 spn
Chilli powder 2 spn or less
Cumin powder 1/2 spn or fennel seeds powder 1/2 spn optional
Turmeric 1 pinch
Egg 1
Ginger garlic paste 1 spn
Salt as required
Oil for spraying
Sliced onion and lemon for garnishing

Cut and clean the paneer and chicken..
Mix rice flour, corn flour , chili powder, turmeric, ginger garlic paste, egg and salt.
Mix well..
Add the paneer and chicken pieces separately..
Keep it marinated for 30 minutes minimum..
Take tooth pick and insert paneer and chicken one by one..
Deep fry in oil or air fry 390 deg for 10 to 15 minutes for chicken.. 5 to 8 minutes for paneer bites..
Flip gently once.. spray oil in between..
Use broil mode at the end for 2 minutes for smoky flavour.. This step is optional..

Serve hot with sliced onions and cut lemonโ€ฆ

Paneer Masala Roti

Paneer finely grated 1 cup
Wheat flour 3 cup
Ginger finely chopped 1 spn
Corriander leaves few
Cumin seeds 1 spn
Green chillies 2 to 3 finely chopped
Salt as required
Oil as required

In a mixing bowl add all ingredients except oil..
Add water little by little and knead it into a tight dough like chapathi dough..
Apply oil on the dough..
Keep it covered..
Let it sit for 10 minutes..
Make small balls ..
Roll it into thin roti’s..

Heat a tawa..
Cook the roti’s on the both sides ..
Sprinkle oil on both sides..
Remove from the tawa once its done..
Serve hot with desired gravy โ€ฆ

Paneer Gravy my style

Paneer 1 cup
Ghee 3 spn
Onion 3
Tomato 2
Ginger 1 inch
Cashew 10 to 15
Whole spices (cinnamon, cardamom, jeera, cloves, bay leaves)
Chilli powder 2 spn
Turmeric 1/2 spn
Garam masala 1 spn
Salt as required
Dry methi leaves 1 spn
Half n half milk or cream milk 3 spn ( optional)

Keep the panner cubes into hot water..
Heat 1 spn ghee in a kadai
Add ginger, followed by onion n tomato
Fry until tomato mushy
Add cashew let it cool down completely

Blent it as a smooth paste

Heat 2 spn ghee in the same pan
Add the whole spices
Add chilli powder, turmeric and garam masala
Fry until the raw smell leaves
Add the ground paste
Add panna also
Add salt
Cook in medium flame until oil separate frm gravy
Add the cream milk
Add finally add dry methi leaves โ€ฆ

Serve hot with roti pulav or any paratha โ€ฆ.

Kadai Paneer

Paneer cubes 1 cup
Onion 2
Tomato 2
Ginger garlic paste 1 spn
Bay leaves 1
Cardamom 2
Cloves 2
Cinnamon 1 inch
Chilli powder 2 spn
Turmeric 1/4 spn
Corriander powder 1 spn
Garam masala 1 spn
Ghee 2 spn
Salt
Capsicum 1
Corriander leaves for garnishing

Keep the paneer cubes in warm water
Heat a pan
Put ghee
Add bay leaves, cloves, cinnamon, cardamom
Fry for a while
Add thinly sliced onions
Fry until golden brown
Add tomatoes now
Fry until mushy
Add turmeric, chilli powder, corriander powder, garam masala and salt
Fry until raw smell leaves
Add water if required
Now add the paneer cubes
Mix gently
Add cubed capsicum now
Fry for a few mins

Now garnish with coriander leaves

Can fry the paneer cubes instead of putting in boiling waterโ€ฆ

Yum yum with chapathi, pulav or roti โ€ฆ.

Palak Paneer

Spinach 1 bunch
Paneer cubes 1 cup
Onion 1 finely chopped
Tomato 2 finely chopped
Turmeric 1 pinch
Corriander powder 1 spn
Salt as required
Ghee 3 spn
Green chillies 5
Cardamom 1
Cloves 2
Whole pepper 1 spn
Jeera 1 spn
Cinnamon 1 inch
Dry methi 1 pinch
Milk 1/4 cup

Boil paneer cubes in hot water
Keep it in the hot water until adding paneer in the gravy

Heat a pan
Add little ghee
Fry cardamom, cloves, whole pepper, cinnamon, jeera
Grind as coarse
Keep aside

In the same pan add spinach
Fry until water evaporates
Cool completely
Grind with green chillies

In the same pan add a spn of ghee
Add onions
Fry well
Add turmeric and corriander powder
Fry for few minutes
Add in tomatoes
Add crushed methi leaves
Fry until tomato turns mushy
Add spinach paste
Cover cook until oil separate from gravy
Add paneer cubes
Add in milk
Mix well
Finally add grind powder
Cook for few minutes

Serve with roti or pulavโ€ฆ

Chapathi with Shahi Paneer

Paneer 1 cup cubed
Onion 1
Tomato 3
Ginger 1 inch
Green chilies 3
Butter or ghee 2 spn
Black elachi 1
Chilli powder 1 spn
Garam masala 1 spn
Turmeric 1/4 spn
Tomato sauce or puree 2 spn
Milk 1 cup
Cream 1/2 cup
Corriander leaves for garnishing

Heat a pan
Add a spn of ghee
Add elachi, green chilies, ginger, and onion
Fry until onion turns translucent
Add tomatoes fry until mushy
Cool completely
Make it as smooth paste
Add the paste in the pan
Add one more spn of ghee and add all spice powders and salt
Add tomato sauce too
Fry until the masala get cooked well
Add paneer cubes fry for 2 to 3 mins
Pour the milk slowly and the cream as well
Cook 3 to 4 mins just the milk get warm
No need to boil
Garnish with corriander leaves
Adjust milk for the consistencyโ€ฆ
No waterโ€ฆ,

Paneer Butter Masala

Paneer 1 cup cubed
Tomato 3 make it as puree
Cashew 8 to 10 soak and grind
Bay leaves 1
Oil 1 spn
Butter 1 spn
Ginger garlic paste 1 spn
Green chilies 3
Chilli powder 2 spoon
Garam masala 1 spn optional
Salt as required
Sugar 1 spn
Dry methi leaves 1/2 spn crushed
Corriander leaves for garnishing

Heat oil and butter in a pan
Add bay leaves
Fry few mins
Add ginger garlic paste
Fry until raw smell leaves
Add tomato puree and chili powder,garam masala
Cook until oil separate from gravy
Add cashew paste
Cook well
Add salt and green chilies now
Add little water to adjust the gravy consistency
Add sugar too..
Add paneer cubes
Cook for 5 to 10 minuets
Add crushed methi leaves in between..
Garnish with coriander leaves โ€ฆ

Tasty paneer butter masala
Suitable for naan ,chapathi, biriyani, pulav even with poori and dosa too ๐Ÿ˜‹๐Ÿ˜‹

Paneer Tikka and Chicken Tikka in Airfryer

Paneer 250g cut into cubes
Chicken 5 leg pieces
Lemon 2
Chilli powder 3 spn
Corriander powder 2 spn
Garam masala 1 spn
Dry Kasuri methi leaves 1 spn crushed optional
Jeera powder 1 spn
Ginger garlic paste 2 spn
Curd 1/4 cup
Salt as required
Ghee 2 to 3 spn

Clean chicken and paneer separately..

Marinate chicken and paneer with salt and lemon juice..
Keep aside for 15 minutes..

For tikka masala..
Add all other ingredients in a bowl except ghee..
Mix well..
Marinate chicken and paneer cubes ..
I marinated overnight for better taste..

For paneer
Mix the capsicum and onion with paneer
In air fryer arrange paneer onion capsicum in a grill stick.. arrange it in air fryer..
In airfryer cook 375 deg for 7 minutes ..
Brush with ghee
Keep roast mode 375 deg for 4 to 5 minutes..

For chicken
Arrange the marinated chicken in airfryer..
Cook 400 deg for 15 minutes
Brush with ghee
Keep roast mode 375 deg for 8 to 10 minutes..

Yummy chicken tikka and paneer tikka ready..

Paneer Tikka Dum Biriyani

Paneer 250g
Curd 2 cup
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala 1 spn
Capsicum 1/2
Onion 1 big
Tomato 3
Ginger garlic paste 2 spn
Ghee 3 spn
Saffron few strands
Milk 1/2 cup
Basmati rice 2 cup
All live spices (cardamom 2, cinnamon 1, bay leaves 1, star annise 1)
Biriyani masala powder 2 spn any kind
Green chilies 3
Mint corriander leaves finely chopped handfull
Salt as required

Step 1..
Marinate paneer , capsicum, 1 tomato with curd , chili powder , corriander powder, garam masala, salt..
Soak basmati rice
Soak saffron with warm milk..
Keep all other ingredients ready..

Step 2..
Cook basmati rice 90% with all live spices..
Drain water and keep aside..

Step 3..
Cook the marinated paneer in a non stick pan until water evaporate.. keep aside.

Step 4..
Heat a pot or kadai..
Add ghee
Add in onion and green chilies.. fry well..
Add ginger garlic paste
Add in tomato fry well
Add biriyani masala powder
Add 1 cup curd fry well..

Step 4..
Layering
First add half of the onion masala paste ..
Add half the paneer tikka as second layer
Add cooked rice as third layer.. add in mint corriander leaves..
Add half of saffron milk..
Repeat the later again..
Add ghee on the top..
Cover well..
Either bake in oven for 20 minutes 375 deg or cook in stove top for 20 to 25 minutes in medium flame..
