Ragi Murungai Adai (Ragi with drumstick leaves)

Ragi flour 2 cups
Drumstick leaves 1 cup
Grated Coconut 1/2 cup optional
Chili powder or green chillies as required
Cumin seeds 1/2 spn
Curry leaves few
Grated garlic 1/2 spn
Salt as required
Oil as required (preferably Sesame oil)

In a mixing bowl add all ingredients except oil..
Mix roughly..
Add 2 spn oil mix again..
Add water little by little and knead it into a semi solid dough..
Not a dosa batter and not like roti dough..
Heat a dosa pan (Iron pan gives extra taste)
Take a big scoop from the dough..
Place it on the middle of pan..
Spread evenly.. use water inbetween to wash hands so that the dough will not stick into hands also easy to spread..
Sprinkle oil on top of that..
Use medium flame..
Cook approximately 2 minutes on each sides..
Remove once it turns brown on each side..
Serve hot with desired chutney or can eat it without any side dish too..
Its a Iron rich recipe .. Village side they do it often.. peanut chutney or tangy chutneys goes well with this recipe..

Dried Peas Dosa

Dried peas 1 cup
Raw rice 1 cup
Urad dhal 1/4 cup
Red chilies 3 to 5
Ginger 1 inch optional
Cumin seeds 2 spn
Black pepper 1 spn
Oil for making dosa
Salt as required

Soak peas, rice and urad dhal overnight..
Grind it with red chilies, cumin seeds, Black pepper and ginger as smooth dough..
Add water if required..
Add salt..
Maks it as dosa batter consistency..

Heat a dosa pan
Spread the batter .. make it as thin dosa..
Spreay oil..
Cook in medium flame..
Flip once one side is done..
Once its cooked both sides fold it ..
Serve hot with desired chutney or sambar..
Can Sprinkle finely chopped onions and green chillies on top of dosa..

Rajma adai dosai

Rajma/kidney beans 1/2 cup
Raw rice 1 cup
Urad dhal 1/4 cup
Red chilies 3 to 5
Ginger 1 inch optional
Fennel seeds 2 to 3 spn
Oil for making dosa
Salt as required

Soak rajma, rice and urad dhal overnight..
Grind it with red chilies, fennel seeds and ginger as smooth dough..
Add water if required..
Add salt..
Maks it as dosa batter consistency..

Heat a dosa pan
Spread the batter .. make it as thin dosa..
Spreay oil..
Cook in medium flame..
Flip once one side is done..
Once its cooked both sides fold it ..
Serve hot with desired chutney or sambar..

Rava Dosa (Chef Venkatesh Bhat Style)

Rava 1 cup
Maida/all purpose flour 3/4 cup
Rice flour 3/4 cup
Ginger finely chopped 1 spn
Cumin seeds 1 spn
Whole black pepper 1 spn
Green chillies 2 finely chopped
Cashew 4 to 5 break into pieces
Curry leaves few finely chopped
Salt as required
Sugar 1 spn
Oil for sprinkle…
Onion finely chopped as required

Take a handful of rava and keep aside..
Mix all ingredients except onion in a bowl..
Add 4 cups of water..
Mix gently without any lumps..
Let it sit for 30 minutes minimum..
Add the fresh handfull rava just before start preparing dosa..
Add one more cup of water..
Batter should be watery…
Heat a dosa pan..
Sprinkle onions and Sprinkle somd oil..
Now pour the dosa batter from the edges..
Try to make as thin as possible..
Sprinkle some oil..
Keep medium flame..
Cook until it turns golden brown…
Do not flip..
Fold gently..
Serve hot with desired chutney…
Yummy crispy onion rava dosa ready…
We can skip onion if we want plain..
Sprinkle some dry chutney/idli podi for flavor…

Instant Spongy Dosa

Rava 1 cup
Grated Coconut 1/2 cup
Curd 1/2 cup
Salt as required
Baking soda 1/4 spn
Oil for making dosa

Grind rava,Coconut, curd with little water..
Don’t add too much water..
In a mixing bowl pour the batter, add salt..
Mix it well..
Add Baking soda..
It gives little bubbles..
Make little thick dosa..
Sprinkle oil..
Flip it… let both the sides turn brown..
Use medium flame..
It taste bit like aapam..
Serve hot with desired chutney or sambar..

Moong dhal dosa ( pesarathu)

Moong dhal 1 cup
Idli rice or any rice 1/4 cup
Ginger 1 inch
Green chilli 3 or more as required
Jeera 1 spn
Onion finely chopped
Salt

Grind moong dhal , rice, ginger, green chilli, jeera all together..
Make it like dosa consistency
Add salt
Heat a dosa pan
Make thin dosa
Sprinkle onions on the top
Sprinkle some oil
Use medium flame to cook..
Dont turn the dosa.. Just fold it as shown in picture..
Serve hot with any chutney u like

Instant dosa with cooked rice…Its working 😊😊

Posting a recipe after long time..

Cooked rice 1 cup
Wheat flour 1 cup
Rice flour 1 cup
Curd 1 cup
Water as needed
Salt and baking soda

Now the recipe..

Take a blender or mixi
Add cooked rice , rice flour, wheat flour, a cup of water
Blend it until it becomes smooth paste
Take this in a bowl
Add curd salt and a pinch of baking soda..
Make it as dosa consistency..
Dont add more water
Check salt
Now the batter ready…

Make dosas and serve with ur favorite chutney 😋😋😋😋😋

Carrot chutney for idli dosa😋😋

Carrot 4
Onion big 1
Red chillies 2 to 3
Urad dhal 1 spn
Garlic 2 pods
Ginger 1 inch optional
Tamarind gooseberry size
Salt
Hing optional
Curryleaves, jeera, for seasoning
Oil

Heat oil in a pan
Add urad dhal and red chillies
Fry for a miniute

Add garlic, ginger followed by onion
Fry until translucent
Add carrots fry in low flame for five minutes
Make it cool
Grind with tamarind and hing
Can add coconut too…
Season with mustard and curryleaves, jeera….
Serve with idli dosa or anything u like….

Adai dosa

Raw rice 1 cup or sona masuri rice
Toor dhal 1/4 cup
Channa dhal 1/2 cup
Moong dhal 1/4 cup optional
Urad dhal 2 spn
Fenugreek seeds 1/4 spn
Red chillies 4
Ginger 1 inch
Jeera 1/2 spn
Onions finely chopped 1
Corriander leaves finely chopped 1/4 cup
Curry leaves few
Salt
Hing 1 pinch optional

Soak rice and all dhals separately for atleast 4 hours

Grind rice and red chillies and ginger first
Once 60% done add dhals
Add jeera too
Grind coarsely
Add finely chopped onions
Corriander leaves, curry leaves, salt, hing
Mix well
Adai dough ready

Make thick dosa using dosa pan
Add butter for more taste
