Tomato chutney

Tomato 2
Onion 1
Green chilli 1
Red chilli 2
Ginger small piece
Tamarind small piece
Corriander seeds 1 spn
Urad dhal 3 spn or channa dhal
Corriander leaves few curry leaves few
Oil 1 spn
Coconut 1/2 cup optional

Heat oil in a pan
Add corriander seeds and urad dhal
Add ginger followed by red chilli and green chilli
Add onion
Fry until translucent
Add tomato
Fry well
add corriander and curry leaves
Fry until tomato becomes mushy
Add tamarind and coconut at the end
Check salt
Make it cool
Grind coarsely
Season with mustard and curryleaves

Serve with idli dosa

Common batter for idli dosa and paniyaram oothapam

Idli rice 4 cups
Urad dhal 1 cup
fenugreek seeds 2 spn
Poha ( aval) 1 cup optional

Soak everything seperaely for atleast 4 hrs

Grind urad dhal
Keep aside
Grind rice, fenugreek seeds, poha together
Mix these batter with salt as required
Fermente overnight

Ur dough readyโ€ฆ

Easy sambar

Toor dhal 1 cup
Onion 1
Tomato 1
Veggies ( carrot, beans, drumsticks,potato watever u like)
Tamarind juice 1 cup
Turmeric 1/2 spn
Sambar powder 1 spn ( fresh powder gives more taste)

Cook dhal with turmeric and 1/4 spn oil
Keep aside
Boil veggies, onion, tomato, turmeric, salt with water( soaking level water enough)
Once veggies half cooked add cooked dhal and tamarind juice
Add sambar powder
Cook for 15 to 20 mins..

Seasoning

Heat a spn of oil ( coconut oil gives more taste)
Add hing
Mustard
Curry leaves
Red chilli 1
Put it into sambar

Serve hotโ€ฆ

Fresh Sambar powder

Channa dhal 1 spn
Urad dhal 1 spn
Fenugreek seeds 1/8 spn
Jeera 1/2 spn
Corriander seeds 1and 1/2 spn
Red chilli 2
Coconut 2 spn

Dry fry all items
Grind coarsely

Chicken biriyani ๐Ÿ˜‹ tried today

Clean chicken pieces with turmeric

Marinate chicken pieces with following
Curd
Chilli powder
Gingergarlic paste
Lemon juice- optional
Salt
biryani masala
Heat butter and oil in a wide pan
Once oil is hot add biryani spices( leaf, cardamom, cinnamon, staranise, mace etc.,) chopped onions and fry till onions are light gold color
Add mint, coriander leaves and fry for 30 sec
Now add marinated chicken and cook it till chicken is 80% cooked. Add very less water if needed.

In between cook basmati rice

While cooking basmati rice add 1 TBS of butter and salt in water. cook bashmati rice till it is 80 % cooked. For 1 glass of water add 1.5 glass if water

Finally take a baking Trey and add chicken at the bottom and layer rice on top of chicken and place it in 450 degree preheat oven for 30 mins to 40 min.cover the tray with aluminum foil.. Mix once it done

Serve hot with raitha or chicken gravyโ€ฆ

Medhu vada recipe

Urad dhal 1 cup
Ginger one inch
Green chillies 2
Onion finely chopped 1 cup
Curry leaves finely chopped few
Whole pepper 1/2 spn optional
Salt as required
Hing a pinch

Soak urad dhal for 2 hrs
Not more than that

Grind urad dhal with ginger and green chilli
Add very little water to grind
Once the dough fluffy take them out
Mix onion, whole pepper, curry leaves
Salt and hing
Heat oil in a pan for deep frying
Make the shape
Fry until vada turns into golden brown
Use medium flame for frying
Serve hot with coconut chutney or sambar or curd๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Moong dhal dosa ( pesarathu)

Moong dhal 1 cup
Idli rice or any rice 1/4 cup
Ginger 1 inch
Green chilli 3 or more as required
Jeera 1 spn
Onion finely chopped
Salt

Grind moong dhal , rice, ginger, green chilli, jeera all together..
Make it like dosa consistency
Add salt
Heat a dosa pan
Make thin dosa
Sprinkle onions on the top
Sprinkle some oil
Use medium flame to cook..
Dont turn the dosa.. Just fold it as shown in picture..
Serve hot with any chutney u like

Quick n easy kesari

Rava 1 cup
Sugar 1 cup
Elachi powder ( cardamom) a pinch
Red color powder optional
Salt a pinch
Ghee 4 spn
Raisins, cashew 1 handfull(as u need)
Rose essence one drop optional

In a pressure cooker take 2 cups of water , 1 spn of ghee or butter, sugar, red color powder, cardamom powder, salt
Cook for one whistle
Release the pressure manually..

Mean while roast rava in a pan with a spn of gheeโ€ฆ
Mix the roasted rava into pressure cooker without lumps
Cover it .. Keep it for 10 to 15 mins

Roast cashew and raisins with ghee
Mix it with the kesariโ€ฆ

Serve hotโ€ฆ

Egg biriyani

Boil egg
Keep aside..

Heat butter and oil in a wide pan
Once oil is hot add biryani spices( leaf, cardamom, cinnamon, staranise, mace etc.,)
Add ginger garlic paste..fry well
chopped onions and fry till onions are light gold color
Add tomatoes.. Cook until it becomes mushy..
Add mint, coriander leaves and fry for 30 sec
Now add curd.. Cook well .. Add chilli powder, turmeric powder,corriander powder and biriyani masala..
Fry until oil separate from gravy..
Add boiled egg..and cook it till gravy is 80% cooked.

In between cook basmati rice

Chicken gravy

Chicken 1/2 kg
Onion 100 g
Tomato 2
Star anise 1
Kalpasi few
Green chill 2
Curry leaves few
Corriander leaves for garnish
Turmeric 1/4 spn
Chilli powder 1 spn
Corriander powder 1 spn
Chicken masala 2 spn
Salt as required

To grind
Cinnamon 1 inch
Gloves 3
Cardamom 1
Cashew 8
Whole pepper 1 spn
Fennel seeds 1 spn
Onion few
Tomato 1
Coconut 1/4 cup optional
Ginger 1 inch
Garlic 8 to 10 pods

Make it as paste

Heat oil in a pan
Add kalpasi and star anise
Add green chillies and curry leaves
Fry for a while
Add onion saute well
Add tomatoes once it becomes mushy
Add chicken put little salt
Fry for a while
Add turmeric ,chilli powder, corriander powder, chicken masala
Saute well
Add the ground paste
Add water as required
Check salt and spices
Adjust the spice level by adding pepper powder and chilli powder
Cook until the chicken well cooked
Finaly garnish with corriander leaves

Serve hot with idli dosa or rice or roti or chapthiโ€ฆ

Mysorepak recipe

Besan flour/ kadalai maavu 1/2 cup
Sugar 1 1/2 cup
Ghee 1 cup or oil

Prepare the flour without lumps
In a heavy bottom pan add sugar
Add water just immerse the sugar level
Heat the pan
Make the sugar syrub to string consistency
Now slowly add flour and mix well
Use medium flame
Meanwhile keep the ghee ready
Add the ghee little by little once the flour mixed well with sugar syrub
Keep mixing without burning the mix
Once adding the ghee the colour will change a bit
If the mix comes thick move it into the tray
Put pieces after few mins before it gets hard..
Sprinkle some sugar on the top if u wantโ€ฆ

Posting a recipe after long time..

Cooked rice 1 cup
Wheat flour 1 cup
Rice flour 1 cup
Curd 1 cup
Water as needed
Salt and baking soda

Now the recipe..

Take a blender or mixi
Add cooked rice , rice flour, wheat flour, a cup of water
Blend it until it becomes smooth paste
Take this in a bowl
Add curd salt and a pinch of baking soda..
Make it as dosa consistency..
Dont add more water
Check salt
Now the batter readyโ€ฆ
