Carrot pulav

Rice 1 cup
I used basmati
Butter 2 spn
Carrot 4 big
Onion 1
Jeera 1 spn
Green chilli 2
Ginger 1 inch finely chopped (optional)
Salt as per need

Cook rice with two cups of water and a spn of ghee with little salt
Make it cool

Heat a pan
Add ghee
Add jeera followed by onion and ginger
Fry golden brown
Add carrot cook it without water
Chk salt
Now add the cooked rice…
Fry gently
Serve hot😋😋
Can garnish with fried cashews…

Spinach pulav

Rice 1 cup
Butter 2 spn
Spinach 1 bunch
Onion 1
Jeera 1 spn
Green chilli 2
Garlic 5 pods finely chopped
Salt as per need

Cook rice with two cups of water and a spn of ghee with little salt
Make it cool

Heat a pan
Add ghee
Add jeera followed by onion and garlic
Fry golden brown
Add spinach cook it without water
Chk salt
Now add the cooked rice…
Fry gently
Serve hot😋😋
Can garnish with fried cashews…

Corriander rice

Basmati 1 cup
Corriander leaves 1 bunch
Green chillies 3
Ginger 1 inch( optional)
Butter or ghee 2 spn
Oil 1 spn
Cardamom 2
Cashew 10 or more
Bay leaves 1
Cinnamon 1 inch
Jeera 1 spn
Coconut milk 1 cup ( optional)
Salt as required

Grind corriander leaves , green chilles, ginger together
Make a smooth paste…
Heat a pan or cooker
Add ghee and oil
Put cardamom, bay leaves, cinnamon and jeera
Fry for a minute
Add cashew
Now add the paste
Fry in low flame for until raw smell leave
Now add rice
Then water 2 cups
If u r using coconut milk 1 cup then 1 cup water is enough
Put salt
Let it boil
Mix well and add 1 spn of butter before closing the lid
Make 1 whistle…

Serve hot with raita or some chips…

Capsicum masala rice

Cook 1 cup rice and make it cool…
I used sona masuri rice
Basmati can give better taste..

Capsicum diced 1 cup
Use different colour capsicum for good look
Onion 1
Mustard 1 spn
Oil or ghee as per need

For masala
Corriander seeds 2 spn
Urad dhal 2 spn
Jeera 1 spn
Red chilli 3 or more as per spice level

Heat 1 spn oil in a pan
Add corriander seeds, urad dhal, jeera, red chill
Fry in low flame
And make it cool
Grind it as powder

Heat ghee
Add mustard
Add onion and salt
Fry well.. Add capsicum
Fry for a miniute
Add the masala powder
Fry until capsicum half cooked
Add rice mix gently…
Serve hot….

Murukku

Rice flour 4 cups
Roasted channa dhal 1 cup(pottu kadalai)
Chilli powder 5 spn
Hing 1 spn
Seasame seeds 1 handfull ( ellu)
Omam 2 spn( optional)
Salt as required
Oil for deep fry

Grind channa dhal like fine powder
Mix all ingredients in a bowl except oil
Add 2 spn of oil or ghee while making dough
Add water make a smooth dough
Heat oil in a pan
Make ur desired shape of muruku
Deep fry it
Muruku ready☺️☺️☺️

Radish chutney

Radish big 1
Onion 1
Tomato 1
Ginger 1 inch
Green chilli 2
Red chilli 2 or 1
Corriander seeds 1 spn
Channa dhal 1 spn
Urad dhal 1 spn
Jeera 1 spn
Tamarind few
Hing 1 pinch optional
Curry leaves few
Salt

Heat a pan
Add a spn of oil
Fry radish until half cooked
Keep it aside
Add oil again in the same pan
Add ginger
Add corriander seeds, channa dhal, urad dhal
Fry in medium flame
Add jeera and red chilli , curry leaves
Add green chillies too
Now add onion fry until translucent
Add tomato mash well

Keep it cool
Now add everything with the fried radish in the mixi or blender
Add tamarind and hing too
Add salt
Grind coarsely

Tomato is optional.. U can add more tamarind will give tangy taste..

Can season with mustard and curry leaves

Serve with rice , idli , dosa…😋😋

Carrot chutney for idli dosa😋😋

Carrot 4
Onion big 1
Red chillies 2 to 3
Urad dhal 1 spn
Garlic 2 pods
Ginger 1 inch optional
Tamarind gooseberry size
Salt
Hing optional
Curryleaves, jeera, for seasoning
Oil

Heat oil in a pan
Add urad dhal and red chillies
Fry for a miniute

Add garlic, ginger followed by onion
Fry until translucent
Add carrots fry in low flame for five minutes
Make it cool
Grind with tamarind and hing
Can add coconut too…
Season with mustard and curryleaves, jeera….
Serve with idli dosa or anything u like….

Vegetable kurma for rice roti …

Carrot , beans, potato, cauliflower any vegetables u like …
Onion 2
Tomato 3
Cinnamon 1 inch
Fennel seeds 1 spn
Poppy seeds 1/2 spn replaced as cashew too
Coconut 1/2 cup
Chilli powder 2 spn
Turmeric 1/2 spn
Garam masala 1 spn
Curd 1/4 cup
Raisins 2 spn optional
Oil salt as needed

Heat a pan
Add 1 spn oil
Add cinnamon, fennel seeds fry for a miniute
Add onion fry until golden brown
Add tomatoes
Fry until mushy
Add coconut n poppy seeds
Make it cool
Grind it keep aside

Microwave all veggies for five minutes with little salt

Heat oil in the same pan
Add the spices turmeric and chilli powder
Add little water to avoid burning
Fry until raw smell leaves
Add veggies
Make sure the masala coated with the veggies
Add water as required cook the veggies 70%
Now add the grinned masala
Add water if required
Cook until oil separate from gravy
Now add curd and raisins
Cook 10 mins in low flame
Garnish with corriander leaves

Yummy veg gravy ready😋😋😋

Serve hot…..
