Fish gravy

Fish 1/2 kg ( i used tilapia fish)
Onion 2 finely chopped
Tomato 2 finely chopped
Chilli powder 2 spn
Turmeric 1/2 spn
Corriander powder 2 spn
Fenugreek powder 1 spn
Salt
Tamarind juice 1 cup depends ur taste adjust it
Oil 2 spn
For seasoning mustard, curry leaves, green chilli 1, jeera

Clean the fish with lime juice

Heat a pan
Add oil and add seasoning items
Fry few mins
Add onion
Fry until golden brown
Add chilli powder, turmeric, corriander powder, fenugreek powder
Fry well
Add tomatoes
Fry until it becomes mushy
Add salt and tamarind juice
Add required water.. dont add much the gravy shd not watery
When the gravy boiling add fish pieces
Cook in medium flame until oil separate from the gravy..

Veggie kurma easy version

Mixed veggies ( carrot, beans, cauliflower, potato, or veggies of own choice) 2 cups
Onion 2
Tomato 1
Ginger garlic paste 1 spn
Whole spices ( bay leaves 1,cinnamon 1 inch, cloves 3, cardamom 1, fennel seeds 1 spn)
Green chilies 2
Chilli powder 2 spn
Corriander powder 1 spn
Garam masala 1 spn
Cashew 10 to 12
Poppy seeds 2 spn
Turmeric 1/2 spn
Salt as required

Heat a pressure cooker
Add a spn of oil
Add the whole spices
When it spluttering add green chilies followed by ginger garlic paste
Add onion fry till golden brown
Add tomatoes fry until it mushy
Add turmeric and spice powders
Add all veggies
Fry for a while
Grind cashew and poppy seeds with some water
Add this paste into gravy
Check the salt
Add water depends the consistency of the gravy
Close the cooker and cook ..
One whistle is enough
Garnish with corriander leaves

Quick n easy spaghetti ๐Ÿ

Plain spaghetti 250 g
Crushed tomatoes or store bought flavored tomato sauce (pasta sauce) 2 cups
Half n half milk or cream milk 1 cup
Salt
Olive oil 2 spn

Take a heavy bottom vessel
Pour water and boil it ( water depends on spaghetti quantity)
Once water boiling add spaghetti
Add a spn of oil
And a spn of salt
Cook spaghetti 70%
If more water remove some
Add the tomato sauce now
Mix it well cook for few minutes
Add milk too
Once spaghetti completely cooked remove frm flame
Garnish with basil leaves ( optional)

Kidney beans/Rajma vada

Rajma 1 cup
Ginger garlic paste 2 spn
Green chilli 2
Red chilli 2
Cinnamon 1 inch
Cloves 3
Fennel seeds 1 spn
Onion 1 finely chopped
Corriander leaves and mint leaves finely chopped 1 cup in total
Salt as required
Hing 1/4 spn
Oil for deep frying

Soak Rajma overnight or minimum 5 to 6 hours..
Drain water completely from soaked rajma..
In a mixi take soaked rajma, cinnamon, cloves, ginger garlic paste,red chilli , green chilli ,hing and salt..
Grind well without water..
Add onion , fennel seeds, corriander and mint leaves with ground rajma..
Mix well and check salt..
Make small balls and keep aside..
Heat oil for frying..
Flatten thinly like vada and deep fry in oil until the bubbles completely gone from oil..

Serve hotโ€ฆ

Masala Potato

Potato 1/2 kg
Onion 1
Fennel seeds powder 2 spn
Sambar powder or chilli powder 2 spn
Turmeric 1/4 spn
Salt
Hing 1 pinch
Mustard seeds 1/4 spn
Curry leaves few

Boil potatoes and remove skin
Cut into cubes
Keep aside..

Heat a pan
Add oil
Followed by mustard seeds and curry leaves
Add onions fry well
Add fennel powder and sambar powder turmeric powder
Fry for a while
Add salt too
Once raw smell leaves add cubed potatoes
Fry in low flame until it becomes crispy and golden brown color

Serve as side dish for sambar or anything

Spinach bonda (keerai bonda)

Spinach 1 cup finely chopped
Besan flour 2 cups
Rice flour 2 spn
Chilli powder ( can replace green chilies)
Onion 1 finely chopped
Curry leaves few finely chopped
Hing 1 pinch
Salt as required
Oil for deep frying

Take all the ingredients in a mixing bowl except oil
Add water and mix well
The dough should not watery
It should be semi solid
Heat oil in a pan
Put the dough in the desired shape
Fry well until golden brown
Yummy bonda ready

Serve with coconut chutney or mint chutney or any chutneys

Kadai Paneer

Paneer cubes 1 cup
Onion 2
Tomato 2
Ginger garlic paste 1 spn
Bay leaves 1
Cardamom 2
Cloves 2
Cinnamon 1 inch
Chilli powder 2 spn
Turmeric 1/4 spn
Corriander powder 1 spn
Garam masala 1 spn
Ghee 2 spn
Salt
Capsicum 1
Corriander leaves for garnishing

Keep the paneer cubes in warm water
Heat a pan
Put ghee
Add bay leaves, cloves, cinnamon, cardamom
Fry for a while
Add thinly sliced onions
Fry until golden brown
Add tomatoes now
Fry until mushy
Add turmeric, chilli powder, corriander powder, garam masala and salt
Fry until raw smell leaves
Add water if required
Now add the paneer cubes
Mix gently
Add cubed capsicum now
Fry for a few mins

Now garnish with coriander leaves

Can fry the paneer cubes instead of putting in boiling waterโ€ฆ

Yum yum with chapathi, pulav or roti โ€ฆ.

Pumpkin tamarind gravy ( pumpkin puli kari)

Pumpkin cut into cubes 1 cup
Onion 1
Tomato 1
Garlic 2
Mustard seeds 1/4 spn
Curry leaves few
Green chilies 1
Channa dhal 1 spn
Fenugreek powder 1 spn
Chilli powder 1 spn
Corriander powder 1 spn
Sambar powder 1 spn
Tamarind juice 1 cup
Turmeric 1/4 spn
Salt
Jaggery 1 spn

Heat a pan
Add a spn of oil
Now add mustard seeds
Once it spluttering add channa dhal
Add curry leaves and green chilli and garlic
Now add onions fry until translucent
Add tomatoes fry well
Add all spice powders now and cook well
Now time to add pumpkin and tamarind juice
Chk the salt
Cook until pumpkin cooked well
Add jaggery at the end
Its all done

It goes well with rice and papadโ€ฆ.
