Roasted garlic veggie noodles

Thin noodles pack 1
Carrot, beans finely chopped 1 cup
Garlic 5 to 6 pods finely chopped
Onion 1 finely chopped optional can replace it as spring onions
Chilli sauce 2 spn
Soya sauce 1 spn
Chilli powder 1 spn
Pepper powder 1/2 spn
Oil 2 spn
Salt as required

Boil veggies separately
Boil noodles and drain the water keep aside

Heat a pan
Add oil
Add garlic fry until dark brown
Add onions fry until brown
Add boiled veggies
Add chilli powder and chilli sauce and soya sauce salt now
Fry well for few mins
Add cooked noodles
Mix gently for few mins in medium flame
Transfer it into serving bowl

Masala Vada Recipe

Channa dhal 1 cup
Ginger 1 inch
Cinnamon sticks 1 inch
Cloves 3
Fennel seeds 1 spn
Red chillies 3 to 4
Green chilies 2
Curry leaves few
Corriander leaves 1/4 cup finely chopped
Mint few finely chopped
Onion 1
Salt
Oil for deep frying

Soak channa dhal for 2 to 3 hrs

Grind coarsely with cinnamon, cloves, red chillies and ginger
Add onion , fennel seeds, curry leaves, corriander leaves, mint , green chilies and salt
Mix well
Heat oil for deep frying
Make small balls and make them flat as shown in the picture
Fry until golden brown in medium flame

Serve with coconut chutneyโ€ฆ.

Adai dosa

Raw rice 1 cup or sona masuri rice
Toor dhal 1/4 cup
Channa dhal 1/2 cup
Moong dhal 1/4 cup optional
Urad dhal 2 spn
Fenugreek seeds 1/4 spn
Red chillies 4
Ginger 1 inch
Jeera 1/2 spn
Onions finely chopped 1
Corriander leaves finely chopped 1/4 cup
Curry leaves few
Salt
Hing 1 pinch optional

Soak rice and all dhals separately for atleast 4 hours

Grind rice and red chillies and ginger first
Once 60% done add dhals
Add jeera too
Grind coarsely
Add finely chopped onions
Corriander leaves, curry leaves, salt, hing
Mix well
Adai dough ready

Make thick dosa using dosa pan
Add butter for more taste

Coconut chutney or aviyal is a gd combo for this ,โ€ฆ..

Liver 150 g
Onion 1 big finely chopped
Green chilies 2
Ginger garlic paste 1 spn
Chilli powder 1 spn
Turmeric 1/2 spn
Fennel seeds powder 1 spn
Garam masala 1 spn
Salt as required
Pepper powder 1 spn
Curry leaves and corriander leaves for garnishingโ€ฆ

Heat a pan
Add oil 2 spn
Add onions and green chilies
Fry until onion turns brown color
Add ginger garlic paste fry well
Add all spice powders and liver as well
Add little salt
Cover andCook in medium flame
Add little water if required
Once 70% cooking done
Remove the cover
Add pepper powder
Fry until the gravy turns dry
Add curry leaves and corriander leaves at the end
Serve hot โ€ฆ.

Mushrooms in red gravy

Mushrooms 1 cup
Onion 1
Ginger garlic paste 1 spn
Tomato puree small tin
Bay leaves 1
Cloves 2
Cinnamon 1 inch
Cardamom 1
Turmeric 1/4 spn
Chilli powder 1 spn
Corriander powder 1 spn
Garam masala 1 spn
Oil 2 spn
Salt as required
Corriander leaves for garnishing

Cut and Clean the mushrooms
Heat a cooking vessel
Add oil
Add bay leaves, cinnamon, cloves, cardamom
Now add onions
Fry well
Add ginger garlic paste
Fry until raw smell leaves
Add mushrooms and spice powders now
Fry well
The gravy leaves its own water
No water required
Now add tomato puree half small tin
Add salt
Cover and cook in medium flame for 10 to 15 mins
The raw smell of tomato puree should leave from the gravy
Cook until oil separate from the gravy
Adjust spice level by adding pepper powder
Finally garnish with coriander leaves

It goes with rice roti all tiffin items too โ€ฆ.

Idyapam with vegetable stew ๐Ÿ˜‹๐Ÿ˜‹

Idyapam

Rice flour 1 cup
Salt
Water as required
Sesame oil

Boil water
Mix rice flour and salt
Add boiled water into the flour mix gently
Add little oil
Make a smooth dough
Idyapam dough ready

Make shapes using idyapam maker and steam cook for about 10 to 15 minutes

Vegetable stewโ€ฆ.

Carrot 2

Peas 1/2 cup
Onion 1 big thinly sliced
Ginger garlic paste 1 spn
Green chillies 3
Cinnamon 1 inch
Cloves 3
Cardamom 3
Coconut milk 2 cups
Water as required
Salt
Coconut oil 2 spn
Curry leaves few

Chop all veggies
Heat a pressure cooker
Add coconut oil
Add cinnamon, cloves, cardamom
Add onions fry for a minute
Add green chilies and ginger garlic paste
Fry again
Add veggies and peas
Add little salt
Add coconut milk and water now
Check the salt
Cover and cook
Remove from stove once its doneโ€ฆ

Dont add much water.. stew should not turn watery..

Yummy veg stew ready..

Masala Murmura (masala pori)

Murmura 2 cups
Oil 2 spn ( use coconut oil for nice flavor)
Mustard 1/4 spn
Garlic crushed 7 to 8
Curry leaves few
Roasted gram dhal ( pottukadalai) 1/4 cup
Roasted peanut 1/4 cup
Salt little
Turmeric 1/4 spn
Red chillies 4

Heat a pan
Add oil
Add mustard seeds, curry leaves and red chillies, crushed garlic one by one
Fry for few mins
Add roasted gram dhal and turmeric now
Fry until dhal becomes crispy
Use medium flame
Add little salt
Add murmura ( pori ) now
Fry in low flame until masala coated with murmura
Add peanuts at the end
Fry in medium flame for few mins

Quick n easy rasamalai recipe

milk powder 1 cup ( i used nido)
Egg 1
Oil 1 spn
Baking soda a pinch

Milk 4 cups
Saffron few
Cardamom powder 1/4 spn
Sugar 10 to 12 spn
Nuts (pista , almond chopped for garnishing)

Heat milk saffron cardamom powder sugar all togetherโ€ฆ
While boiling milk we prepare the dough for malai
Take milk powder, beaten egg, baking soda and a spn of oil..
Mix gently with hands
Make small balls and flat it like rasamalai..
Make small balls it will double the size once u cook it

When milk is boiling add the malai balls slowly
Once the balls start to swell up lower the flame..
Cook for few more minutes..
Garnish with almond and pista..

Serve chill ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Spongy soft rava idli recipeโ€ฆ

Rava 1 cup
Curd 3/4 cup
Salt as required
Baking powder 1/2 spn

For seasoning
Oil 1 spn
Mustard seeds 1/4 spn
Urad dhal 1/4 spn
Curry leaves few
Ginger 1 inch finely chopped optional
Hing 1 pinch
Jeera 1/4 spn
Chillies 3 finely chopped
Turmeric 1/4 spn

Mix rava and curd in a bowl
Keep aside for 15 mins

Now add water and salt
Make it as idli batter consistency

Heat oil in a pan
Add oil
Mustard seeds, urad dhal, ginger
Then add jeera , curry leaves
Green chilies one by one
Fry well
Add turmeric too
Pout this into batter
Add baking soda now
U can see the small bubbles coming out
Mix well
Batter ready

Now make idliesโ€ฆ
Serve hot with desired chutney and sambar
