Pal Kozhukattai / Milk Kozhukattai

Rice flour 1 cup
Milk 2 cup
Coconut milk 1/2 cup optional
Sugar 1/2 cup
Salt a pinch
Cardamom powder 1/4 spn
Ghee 1 spn

Boil 1 cup water..
Add it in rice flour with a pinch of salt..
Mix with a fork or spoon..
Cover and leave it for 5 minutes..
Make a smooth dough ..

Make small ball size or any desired shape..
Keep aside..

Heat milk in a pan
Once it started boiling add sugar..
Once sugar melted add the rice balls gently..
Cook in medium flame for 7 to 10 minutes..
Add the coconut milk and cardamom powder..
Keep few more minutes..

Yummy healthy traditional pal kozhukattai ready…
Serve hot or cold..

Quick Ladoo

Roasted gram (pottu kadalai) 1 cup
Sugar 1/2 cup
Cardamom 2
Ghee 1/4 cup or less

Melt ghee
Dry grind roasted gram , sugar and cardamom as fine powder..
Sieve the flour remove crunchy parts.

Mix with ghee little by little.. knead it as smooth dough.. make ladoos or any desired shape..

Quick n healthy ladoo ready..

Chicken Tikka Masala

Chicken 1/2 kg
Onion 1 finely chopped
Tomato puree or paste 1 cup
Cream milk or half and half 1 cup
Ginger garlic paste 2 spn
Green chillies 2
Chilli powder 2 spn
Corriander powder 2 spn
Garam masala 2 spn
Curd 1 cup
Salt as required
Lemon juice 2 spn
Dry Kasuri methi leaves 1 spn crushed
Ghee 2 spn

For tikka marination

Add chicken, ginger garlic paste 1 spn, chill powder 1 spn, corriander powder 1 spn, garam masala 1 spn, curd 1 cup salt and lemon juice ..
Mix gently.. marinate 2 to 3 hrs or over night.. or use immediately if needed..
Shallow fry with oil and keep aside..
I did tikka in air fryer 400 deg for 12 to 15 minutes..
Keep aside..

Heat a pan
Add onion fry until golden brown..
Add ginger garlic paste fry until raw smell leaves..
Add green chili and spice powders..
Fry for a minute..
Add the tomato puree
Cook until oil separate from gravy..
Add cream milk mix gently..
Add the tikka ..
Check salt..
Add kasuri methi leaves and cook for few minutes..
Garnish with corriander leaves optional..

Same way paneer tikka also we can prepare..

Instant Dosa

Rava 2 cup (fine rava)
Curd 1 cup
Salt as required
Rice flour 2 spn optional

Dry roast rava in medium flame until nice aroma comes out..
Cool and dry grind in a mixi..
Add in curd salt and rice flour with little water..
Make it as smooth dosa batter..
Add water if required..
Let it set for 15 to 20 minutes..

Make thin dosas flip once ..
Use ghee or oil 1 spn .. to spread on dosa..
Use medium flame for crispy dosa..
Make sure sprinkle water in dosa pan for each dosa ..

Serve hot with desired chutneys…

Kara Chutney (Spicy Onion Chutney)

Red chilies 6 to 8
Onion 2 cup peeled small onions
Can use big onions too (prefer red onions)
Garlic pods 5 to 6
Tamarind little bit
Salt as required
Sesame oil 2 spn
Mustard 1/4 spn
Cumin seeds 1/4 spn
Curry leaves few
Hing a pinch

Grind red chilies in a mixi
Add little water to make as chilli paste..
Add onion garlic tamarind and salt..
Don’t add water. Grind well ..
Transfer into a bowl..

Heat a pan
Add sesame oil
Add hing and mustard seeds and cumin seeds..
Add curry leaves..
Pour the seasoning in the chutney..
This goes with idli dosa well..

Air Fryer Jamoons…

Gulab jamoon mix 1 cup (175 g )
Powdered sugar 2 spn
Rava 2 spn
Ghee 2 spn
Milk 1/4 cup

For syrub

Sugar 2 cup
Water 2 cup
Rose essence few drops optional
Cardamom powder 1/2 spn

In a mixing bowl add jamoon mix, powdered sugar, rava ..
Mix gently.. add milk little by little and make it as smooth dough..
Let it set for 30 minutes..

Make sugar syrup by adding sugar and water..
Once it started boiling add rose essence or cardamom powder..
Keep aside..

Make small balls from the dough arrange it in air fryer tray.. use ghee while making jamoons..
Air fryer mode 375 deg keep it for 5 minutes..
Brush with ghee in between..
Keep it again for 3 to 4 minutes until it turns golden brown..

Add the fried jamoons in the sugar syrup..let it soak for 1 to 2 hrs..

Yummy oil less jamoons ready..

Turkey Fry Restaurant Style

Turkey Fry

Turkey 1/2 kg
Onion 1 finely chopped
Tomato 1 thinly sliced
Ginger garlic paste 1 spn
Turmeric 1/4 spn
Chilli powder 2 spn
Garam masala or chicken masala 1 spn
Pepper powder 1 spn
Cumin seeds 1/4 spn
Curry leaves few
Oil or ghee 2 spn
Salt as required
Corriander leaves for garnishing

Pressure cook turkey with little turmeric and keep aside..

Heat a pan
Add oil or ghee
Add cumin seeds
Add onions fry until golden brown
Add in ginger garlic paste fry well
Add all spice powders and fry again..
Add in tomatoes.. fry until mushy..
Add salt.. add cooked turkey with water..
Cook until gravy becomes thick..
Adjust spice by adding pepper powder ..
Garnish with coriander leaves..
Serve with rice roti or any tiffin item…

Bread Cutlet in Airfryer

Bread 3 slices any kind
Potato 4 medium size
Onion chopped 1
Ginger paste or finely chopped 1 spn
Capsicum 1/2 finely chopped optional
Chilli powder 2 spn
Pepper powder 1/2 spn
Turmeric 1/4 spn
Garam masala 1/2 spn
Corn flour 1 spn
Chat masala 1/4 spn optional
Corriander leaves finely chopped 1/4 cup
Salt as required
Oil for brushing or cooking oil spray

Boil potatoes with little salt keep aside.
Tear bread into small pieces..
Mash potatoes add in bread..
Add all other ingredients except oil.
Make it as fine dough..
Make into desired cutlet shape ..
Arrange it in trays..
Spray little oil
In airfryer 375 deg cook for 10 minutes..
Flip inbetween.. keep 5 to 10 minutes more..
Flip inbetween also brush oil each side once again..
Serve hot with ketchup..
