Stir Fry Egg Noodles

Noodles 3 cup any kind
I used egg noodles
Eggs 3
Tomato 1
Onion 1
Capsicum 1/2
Salt and pepper as required
Oil 2 spn
Ginger 1 inch thinly sliced or garlic 2 spn thinly sliced.. i used ginger

Cook noodles in boiled water for 3 to 4 minutes with little salt. Drain the water. Wash it with cold water immediately.. apply 1 spn oil and mix..

Heat a pan
Add oil then ginger or garlic..
Use high flame..
Add onions fry for a minute.
Add capsicum and tomatoes fry until half cook.
Add salt and pepper..add in eggs..
Fry until egg half cook..
Check salt.. add cooked noodles..
Mix gently..

Serve hot with spring roll or any desired side dish..
Keep aside..

Potato Onion Vada

Potato 1 big grated
Onion 1 finely chopped
Ginger thinly sliced 2 spn
Green chillies 3 to 4 finely chopped
Salt as required
Baking soda 1/4 spn
Besan flour 1/2 cup
Rice flour 2 spn
Corriander leaves 1/4 cup finely chopped
Oil 2 spn
Curry leaves few

Mix everything in a bowl. Make it as a fine dough. Don’t add water.
Make vada shape in airfryer trays..
Keep fryer mode 400 deg 5 minutes..
Flip and brush with oil if required.. keep 3 more minutes..
Adjust time if required..
Its crispy outside.. crunchy inside..
Serve with chutney or ketchup..

Dum Aloo

Mini potatoes 10 to 12
Onion 1
Tomato 1
Ginger garlic paste 2 spn
Cashew 6 to 8
Cinnamon 1 inch
Cloves 2
Cardamom 1
Chilli powder 2 spn
Corriander powder 1 spn
Turmeric 1/4 spn
Garam masala 1 spn
Salt as required
Curd 1 cup
Oil 3 spn
Cumin seeds 1 spn
Dry Kasuri methi leaves 1/2 spn

Boil potatoes with little salt 1 whistle in pressure cooker.
Peel and keep aside.

Heat oil in a pan
Add 2 spn oil
Add chili powder 1 spn and little salt..
Fry the boiled potatoes until the chili powder coated well with potatoes..
Keep aside..
In the same pan add cinnamon,cloves, cardamom,fry for few seconds..then add onion ,tomato ,ginger garlic paste fry well..
Add cashews too..
Grind well make it as smooth paste..

Heat the same pan
Add 1 spn oil
Add cumin seeds..
Add the masala paste.. add chili powder,turmeric, corriander powder and garam masala..
Cook until oil separate from gravy..
Add curd fry well..
Add 1 cup water too.. when its boiling add the fried potatoes..
Cook for few more minutes..
Crush kasuri methi leaves at the end..
Cook for 2 minutes..
Yummy dum aloo ready..

Bread Biriyani

Bread slices 8 to 10 cut into pieces
Onion 1
Tomato 1
Capsicum 1 diced
Ginger garlic paste 1 spn
Biriyani powder 1 spn(powdered mixture of live spices)
Mint & corriander leaves finely chopped 1/4 cup each
Chilli powder 1 spn
Carrot peas 1 cup
Salt as required
Oil or ghee 2 spn

Heat oil or ghee in a pan
Add biriyani powder fry in medium flame for few seconds..
Add onions fry well
Add ginger garlic paste fry for a minute
Add vegetables fry again
Add tomatoes and capsicum give it a fry
Add chili powder and salt..
Add corriander leaves and mint too
Check for salt..
Once the vegetables cooked add bread pieces..
Saute in high flame until the masala coated well into breadโ€ฆ
Serve hotโ€ฆ

For egg flavor just fry eggs with salt and pepper like scrambled egg.. add it at the end.. mix well..

Capsicum Peanut Fry

Capsicum 2 diced
Oil 2 spn
Cumin seeds 1 spn
Mustard seeds 1/4 spn
Split urad dhal 1/2 spn
Curry leaves few
Garlic 3 chopped
Turmeric 1/4 spn
Salt as required

For peanut mix
Dry grind the following ingredients
Roasted peanut 1/2 cup
Grated coconut 1/4 cup
Cumin seeds 1 spn
Chilli powder 2 spn
Garlic pods 4 to 5
Salt 1/4 spn

Heat oil in a pan
Add mustard seeds, split urad dhal, cumin seeds, curry leaves few..
Add garlic..
Fry well
Add in diced capsicum..
Give it a fry.. add turmeric powder and salt..
Cook until it becomes soft..
Add the peanut mix fry for 2 to 3 minutes..
Serve hot..
Perfect side dish for roti or rice..

Crispy Wheat Dosa

Wheat flour 1 cup
Baking soda 1/4 spn
Salt as required

Mix wheat flour with salt
Add water and make it as smooth batter without any lumps..
Add baking soda mix well until it leaves little bubbles..
Make thin dosa’s..
Adding onions will give more taste..

Coconut chutney is the best combo..
Can serve with any desired chutneys..
Normally wheat dosa will not be crisp and thin..
This way it gives a perfect crispy textureโ€ฆ

Dosa Pizza

Dosa batter any kind (wheat or maida or regular rice batter)
Cheese desired variety
Capsicum diced
Tomato sliced
Onion sliced
Pizza sauce optional
Salt as required
Oil or ghee 1 spn

Heat dosa pan .. keep in medium flame
Pour batter and spread it .. not too thin..
Make it little thick..
Arrange the toppings as you wish except cheese..
Add cheese on the top..
Sprinkle salt..add oil or ghee..
Cover and cook until cheese melts..
I didn’t add pizza sauce.. but can add if required..

Serve hot..

Curd Muruku

Rice flour 1 cup
Curd 1/2 cup
Chilli powder 2 spn or more as per taste
Turmeric 1/4 spn
Ajwan or cumin seeds 2 spn
Hing 1/4 spn
Butter or ghee 2 spn
Salt as required
Water 1/2 cup or less
Oil for deep frying

In a mixing bowl add rice flour, chili powder, turmeric, hing, ajwan , butter, salt..
Mix well ..
Add curd little by little mix gently..
Add water if required until it becomes smooth dough..
Adjust salt and spice if required..
Make desired muruku shape and deep fry in oil until it turns crispy..
Can do it in airfryer tooโ€ฆ
Store it in a airtight container..
