Chicken biriyani ๐Ÿ˜‹ tried today

Clean chicken pieces with turmeric

Marinate chicken pieces with following
Curd
Chilli powder
Gingergarlic paste
Lemon juice- optional
Salt
biryani masala
Heat butter and oil in a wide pan
Once oil is hot add biryani spices( leaf, cardamom, cinnamon, staranise, mace etc.,) chopped onions and fry till onions are light gold color
Add mint, coriander leaves and fry for 30 sec
Now add marinated chicken and cook it till chicken is 80% cooked. Add very less water if needed.

In between cook basmati rice

While cooking basmati rice add 1 TBS of butter and salt in water. cook bashmati rice till it is 80 % cooked. For 1 glass of water add 1.5 glass if water

Finally take a baking Trey and add chicken at the bottom and layer rice on top of chicken and place it in 450 degree preheat oven for 30 mins to 40 min.cover the tray with aluminum foil.. Mix once it done

Serve hot with raitha or chicken gravyโ€ฆ

Chicken gravy

Chicken 1/2 kg
Onion 100 g
Tomato 2
Star anise 1
Kalpasi few
Green chill 2
Curry leaves few
Corriander leaves for garnish
Turmeric 1/4 spn
Chilli powder 1 spn
Corriander powder 1 spn
Chicken masala 2 spn
Salt as required

To grind
Cinnamon 1 inch
Gloves 3
Cardamom 1
Cashew 8
Whole pepper 1 spn
Fennel seeds 1 spn
Onion few
Tomato 1
Coconut 1/4 cup optional
Ginger 1 inch
Garlic 8 to 10 pods

Make it as paste

Heat oil in a pan
Add kalpasi and star anise
Add green chillies and curry leaves
Fry for a while
Add onion saute well
Add tomatoes once it becomes mushy
Add chicken put little salt
Fry for a while
Add turmeric ,chilli powder, corriander powder, chicken masala
Saute well
Add the ground paste
Add water as required
Check salt and spices
Adjust the spice level by adding pepper powder and chilli powder
Cook until the chicken well cooked
Finaly garnish with corriander leaves

Serve hot with idli dosa or rice or roti or chapthiโ€ฆ

Chicken gravy different version

Chicken 1/2 kg
Onion 2 big numbers
Tomato 2
Ginger garlic paste 1 spn
Fennel seeds 1/2 spn
Cinnamon 1 inch
Cloves 3
Cardamom 2 / black cardamom gives rich flavor
Turmeric 1/4 spn
Chilli powder 2 spn
Garam masala 1 spn optional
Cashew 15 to 20
Poppy seeds 1 spn
Salt

Heat oil in a pan
Add cinnamon, cloves, cardamom and fennel seeds
Add onion fry well
Add ginger garlic paste
Fry until raw smell leaves
Add tomato
Now add turmeric , garam masala
Add chicken pieces
Cover n cook until chicken cooked 70%
Grind cashew , poppy seeds, and chilli powder as smooth paste
Add it into the gravy along with required water
Check salt
Cook until oil separate from the gravy
Garnish with coriander leaves..

If u add less water it almost taste like butter chicken.. this gravy goes with rice roti or anything u likeโ€ฆ.

Boneless chicken gravy

For marination

Chicken 1/2 kg
Lemon juice 1 spn
Yogurt 2 spn
Chilli powder 1 spn
Turmeric 1/4 spn
Ginger garlic paste 1 spn
Salt
Pepper powder 1/4 spn

For gravy

Onion 1 finely chopped
Tomato 2
Ginger garlic paste 1 spn
Cinnamon 1 inch
Cloves 3
Cardamom 1
Bay leaves 1
Mace 1
Tomato paste 2 spn
Turmeric 1/4 spn
Chilli powder and pepper powder as needed
Corriander powder 1 spn
Garam masala 1 spn
Salt
Oil 2 spn

Marinte chicken for 20 to 30 minutes

Heat oil in a pan
Add bay leaves, cardamom, cinnamon, cloves, mace sautรฉ slightly
Add onion fry well
Add ginger garlic paste fry until golden brown
Add tomato
Fry until mushy
Add tomato paste
Add corriander powder, chilli powder, garam masala , turmeric and salt
Fry for a while
Add marinated chicken
Add a cup of water
Adjust water level as ur gravy consistency
Cover and cook until oil separate frm gravy
Garnish with coriander leavesโ€ฆ.

It goes well with rice roti idli dosa almost everything ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Shivaji Biriyani ( Chicken biriyani )

For 2 cups rice
1/2 kg chicken

To Grind :
Garlic 4 pods
Ginger 1 inch
Coriander leaves handful
Onion 2
Green chilies 3
Mint handful
Tomato 2

Method:

Heat 4 tablespoons of ghee, add all live spices, add chicken and fry it for a while until golden brown. Now add the grounded paste to this and allow it to boil for while until the raw smell goes. To this add 2 cups of rice and 4 cups of water.
And add coriander powder, cumin powder, chilli powder and biryani masala.
Allow it to cook
If the rice 70% done transfer it into a bakeware or foil tray
Cover it with foil sheet
Preheat oven 400 deg
Keep the biriyani tray into oven
Bake for 20 to 25 mins
Its the easiest way of dhum biriyani

Chicken Ghee Roast

Chicken 500 g
Ghee 3 spn
Onion 2
Ginger garlic paste 1 spn
Turmeric 1/2 spn
Chilli powder 2 spn
Corriander powder 1 spn
Chicken masala 1 spn optional
Pepper powder 1 spn
Salt corriander leaves for garnishing

Heat ghee in a pan
Add ginger garlic paste
Add onions fry until golden brown
Add all spice powders one by one
Fry for a minute
Add chicken
Add salt too
Cover and cook in medium flame
No need to add water just sprinkle some water if needed
Once chicken cooked soft n juicy turn off the flame
Garnish with coriander leaves

Easy chicken curry

Chicken 1/2 kg
Bay leaves 1
Cinnamon 1 inch
Gloves 2
Cardamom 1
Onion 2
Tomato 2
Ginger garlic paste 1 spn
Turmeric 1/4 spn
Chilli powder 1 spn
Corriander powder 1 spn
Chicken masala or garam masala 1 spn
Fennel seeds powder 1 spn
Oil 2 spn
Corriander leaves and curry leaves for garnishing

Heat oil in a pan
Add oil
Add bay leaves, cinnamon, gloves, cardamom
Fry for a minute
Add onions now
Fry till golden brown
Add ginger garlic paste
Fry well
Add tomatoes fry until mushy
Add chicken along with all spice powders
Add salt
Fry well
Add little water
Close and cook in medium flame for 15 to 20 mins until oil separate frm gravy
Mix the gravy in the middle
Finally garnish with coriander leaves and curry leaves
Gravy ready to serveโ€ฆ

Pepper Chicken Restaurant style

Chicken 1/2 kg
Onion 1 big finely chopped
Green chilies 2 to 3
Ginger garlic paste 1 spn
Whole pepper 2 spn
Fennel seeds 1 spn
Whole jeera 1 spn
Turmeric 1/4 spn
Chilli powder 1 spn optional
Oil 2 spn
Curry leaves few
Corriander leaves for garnishing

First grind whole pepper, fennel seeds, jeera as coarse powder

Heat oil in a pan
Add green chilies and onion
Fry with little salt
Add ginger garlic paste
Fry well until raw smell leaves
Add the pepper powder mix
Add turmeric and chili powder too
Add salt and curry leaves
Fry well
Add chicken mix well
Cover and Cook in medium flame until chicken cooks properly
Mix in between
Once chicken cooked well
Check salt and spiciness
Adjust salt and pepper powder..
Garnish with coriander leaves

Chicken Biriyani

Chicken 1/2 kg
Basmati rice 1 cup soak 10 mins
Onion 2
Tomato 2
Ginger garlic paste 1 spn
Green chilies 3
Whole spices (cinnamon, bay leaves, cloves,elachi, jeera, whole pepper)
Ghee 3 spn
Oil 2 spn
Spice powders ( turmeric, chili powder, garam masala, biriyani masala optional)
Corriander leaves and mint half cup each
Curd 3 spn
Salt as required

Heat a pan
Add oil and 2 spn of ghee
Add all whole spices
Add onion fry until golden brown
Add ginger garlic paste
And mint corriander leaves
Fry well
Add in tomatoes
Fry until mushy
Add all spice powders and curd
Add chicken too
Add salt
Cover and cook for 15 minuets
Mix well in between
Once chicken 70% done add soaked rice
Add 1 cup water as gravy already having some water
Transfer into oven safe tray or vessel
Preheat the oven 375 deg
Keep the vessel inside
Bake for 30 to 35 minuets
Mix once after 15 minuets add little ghee too
Once its done switch off the oven
Keep the biriyani for 10 more minuets

Paneer Tikka and Chicken Tikka in Airfryer

Paneer 250g cut into cubes
Chicken 5 leg pieces
Lemon 2
Chilli powder 3 spn
Corriander powder 2 spn
Garam masala 1 spn
Dry Kasuri methi leaves 1 spn crushed optional
Jeera powder 1 spn
Ginger garlic paste 2 spn
Curd 1/4 cup
Salt as required
Ghee 2 to 3 spn

Clean chicken and paneer separately..

Marinate chicken and paneer with salt and lemon juice..
Keep aside for 15 minutes..

For tikka masala..
Add all other ingredients in a bowl except ghee..
Mix well..
Marinate chicken and paneer cubes ..
I marinated overnight for better taste..

For paneer
Mix the capsicum and onion with paneer
In air fryer arrange paneer onion capsicum in a grill stick.. arrange it in air fryer..
In airfryer cook 375 deg for 7 minutes ..
Brush with ghee
Keep roast mode 375 deg for 4 to 5 minutes..

For chicken
Arrange the marinated chicken in airfryer..
Cook 400 deg for 15 minutes
Brush with ghee
Keep roast mode 375 deg for 8 to 10 minutes..
