Kothu Parota with Egg

Parota 4 cooked and cut as small pieces
Onion 1 finely chopped
Ginger grated 1/2 spn
Mixed veggies finely chopped 1 cup
(Carrot, beans,potato)
Salt as required
Pepper 1/2 spn
Egg 2
Turmeric 1/4 spn
Chilli powder 1 spn
Garam masala 1 spn
Oil 2 spn
Ketchup 1 spn optional
Curry leaves and corriander leaves for garnishing

Heat a pan
Add oil
Add onions, ginger fry well
Add veggies with little salt
Cook in medium flame
Just sprinkle water if needed
Add all spice powders
Add ketchup too
Fry well
Beat the eggs
Add the eggs fry in medium flame until eggs cooked completely
Add parotas fry in high flame for 3 to 4 mins
Garnish with curry leaves and corriander leaves

Ven Pongal

Raw rice 1 cup
Moong dhal 1/2 cup
Ginger grated 1/2 spn
Green chilies 3
Jeera 1/2 spn
Whole pepper 1/2 spn
Cashew 6 to 7
Curry leaves few
Mustard 1/2 spn
Ghee 3 spn
Hing 1 pinch
Salt as required
Water 3 cups
Milk 1 cup

Wash rice and moong dhal and soak it
Heat a pressure cooker
Add ghee
Add hing, mustard
Once it crackle add jeera , whole pepper, ginger, curry leaves
Add cashew too
Add rice and moong dhal
Fry for 3 mins
Add water and milk and salt too
Pressure cook for three whistle

Mix well..serve hot with sambar and coconut chutney…

Rice dhal can be cooked separately with water and milk
Do the seasoning and mix it
This is another method…
Add water and milk

Wheat Rava Sweet Pongal

Wheat rava 1 cup
Moong dhal 1/2 cup
Jaggery 3 cups
Water 3 cups
Milk 1 cup
Ghee 1/2 cup
Cardamom powder 1/4 spn
Few Raisin and cashew roasted in ghee

Heat a pressure cooker
Add a spn of ghee
Add moong dhal fry well
Add wheat rava fry for a minute
Add water and milk
Pressure cook it

Meanwhile melt the jaggery with little water
Once wheat rava cooked well add the melted jaggery in it
Cook in medium flame without burning
Add cardamom powder raisins and cashew
Add more ghee mix well
Once it started releasing ghee its done
Serve hot 😋😋😋

Chicken Biriyani

Chicken 1/2 kg
Basmati rice 1 cup soak 10 mins
Onion 2
Tomato 2
Ginger garlic paste 1 spn
Green chilies 3
Whole spices (cinnamon, bay leaves, cloves,elachi, jeera, whole pepper)
Ghee 3 spn
Oil 2 spn
Spice powders ( turmeric, chili powder, garam masala, biriyani masala optional)
Corriander leaves and mint half cup each
Curd 3 spn
Salt as required

Heat a pan
Add oil and 2 spn of ghee
Add all whole spices
Add onion fry until golden brown
Add ginger garlic paste
And mint corriander leaves
Fry well
Add in tomatoes
Fry until mushy
Add all spice powders and curd
Add chicken too
Add salt
Cover and cook for 15 minuets
Mix well in between
Once chicken 70% done add soaked rice
Add 1 cup water as gravy already having some water
Transfer into oven safe tray or vessel
Preheat the oven 375 deg
Keep the vessel inside
Bake for 30 to 35 minuets
Mix once after 15 minuets add little ghee too
Once its done switch off the oven
Keep the biriyani for 10 more minuets

Brinjal Peanut Gravy

Brinjal 8 to 10
Tomato 2 if big ones or 3 small ones
Garlic 5 to 6
Roasted peanut 3 spn
Red chillies 8 to 10 soak in hot water
Curry leaves few
Tamarind juice thick 1/4 cup
Corriander powder 3 to 4 spn
Salt as required
Oil 3 spn

Grind tomatoes,peanut,red chillies, garlic, and curry leaves…
Slit the brinjals put it in water
Heat a pressure cooker
Add oil
Add brinjal fry for five minutes
Add the peanut paste which grinded already
Add tamarind juice, corriander powder, salt
Mix well
Add water not more than 2 cups
Pressure cook for 2 whistle
Or can cook in pan
Follow the same process until oil separate from gravy
Serve hot…

Perfect combo for biriyani, pulav , any variety rice ,simple rice or roti….

Carrot Fried Rice 🍛

Grated carrot 1 cup
Ginger grated 1 spn
Jeera 1/2 spn
Green chilies finely chopped 2
Curry leaves few
Green onions 1/4 cup chopped
Cooked rice 250 grams
Salt as required
Ghee 2 spn
Pepper powder 1/2 spn
Chili powder 1/2 spn optional

Heat a pan
Add ghee
Add jeera, ginger ,green chilies,curry leaves
Fry well
Add carrots
Add little salt fry well
Add chilli powder and pepper powder
Fry until carrot half cooked
Add green onions
Fry for a minute
Add cooked rice
Mix gently

Serve hot 😋😋
Can do the same recipe with other vegetables too…

Paneer Butter Masala

Paneer 1 cup cubed
Tomato 3 make it as puree
Cashew 8 to 10 soak and grind
Bay leaves 1
Oil 1 spn
Butter 1 spn
Ginger garlic paste 1 spn
Green chilies 3
Chilli powder 2 spoon
Garam masala 1 spn optional
Salt as required
Sugar 1 spn
Dry methi leaves 1/2 spn crushed
Corriander leaves for garnishing

Heat oil and butter in a pan
Add bay leaves
Fry few mins
Add ginger garlic paste
Fry until raw smell leaves
Add tomato puree and chili powder,garam masala
Cook until oil separate from gravy
Add cashew paste
Cook well
Add salt and green chilies now
Add little water to adjust the gravy consistency
Add sugar too..
Add paneer cubes
Cook for 5 to 10 minuets
Add crushed methi leaves in between..
Garnish with coriander leaves …

Tasty paneer butter masala
Suitable for naan ,chapathi, biriyani, pulav even with poori and dosa too 😋😋

Mushroom Fried Rice Restaurant Style

Cooked rice 3 cups
Mushroom 1 cup
Green chilies 2 finely chopped
Ginger grated 1 spn
Chilli powder 1 spn optional
Pepper powder 1/2 spn
Salt as required
Chilli sauce 1 spn
Soya sauce 1 spn
Ghee or oil 2 spn
Green onions 1/2 cup or more

Heat ghee in a pan
Add ginger and green chilies
Fry for a minute
Add mushroom
Add salt , chili powder, pepper powder
Once mushroom cooked well add chilli sauce and soya sauce
Add green onions too
Fry for a minute
Add cooked rice at the end
Make it high flame when adding rice
Mix gently
Serve hot ….

Cauliflower Pepper Curry

Cauliflower 1
Onion 1
Tomato 2
Cinnamon 1 inch
Cloves 2
Fennel seeds 1/2 spn
Curry leaves few
Mustard 1/2 spn
Turmeric 1/2 spn
Salt as required
Oil 2 spn
Corriander leaves for garnishing

To grind
Red chillies 4
Whole pepper 1/2 spn
Fennel seeds 1 spn
Corriander seeds 1 spn
Add 1/2 cup water and grind as smooth paste

Clean cauliflower with boiling water and salt turmeric
Heat a pan
Add oil
Add mustard, then cinnamon, cloves, fennel seeds and curry leaves
Add finely chopped onions
Fry until translucent
Add tomatoes fry until mushy
Add turmeric and salt
Add cleaned cauliflower fry for few minutes
Add masala paste
Cover and cook until oil separate from gravy
Finally add chopped corriander leaves

Serve hot 😋😋😋
