Egg Fry (Poriyal)

Egg 4
Onion 1
Ginger 1 inch grated optional
Green chilies 2 finely chopped
Oil 1 spn
Curry leaves few
Turmeric 1/4 spn
Salt as required
Pepper powder 1 spn

Beat the eggs keep aside

Heat a pan
Add oil
Add grated ginger and green chilies
Fry for a minute
Add onions
Fry until translucent
Add curry leaves
Add turmeric fry well
Add pepper powder and salt
Now add the beaten eggs
Fry in medium flame until eggs well cooked

Can add finely diced capsicum at the end
Fry for a minute

Chinna Vengaya Kulambu (Small Onion Gravy)

Small onions 15 to 20
Garlic 6 to 7 optional
Whole pepper 1 spn optional
Fenugreek seeds 1 spn
Jeera 1 spn
Mustard 1/2 spn
Urad dhal 1/2 spn
Curry leaves few
Green chilies few
Ginger 1 inch
Spice powders ( turmeric 1/4 spn, chilli powder 1 spn, corriander powder 2 spn, fenugreek powder 1/2 spn)
Salt as required
Sesame oil 2 spn
Hing 1 pinch
Tamarind juice 1 cup

Heat a pan
Add oil and hing
Add mustard , urad dhal, whole pepper
Add finely chopped green chilies optional
Add Grated ginger optional
Once splutter add fenugreek seeds and jeera
Add curry leaves
Then add onion, garlic
Fry until translucent
Add all spice powders and salt
Fry for 2 minuets
Add tamarind juice and required water
Cover and cook in medium flame until oil separate from gravy

Perfect combo for rice with potato fry
Very good immunity developer for winter

Donโ€™t add much water ( not more than 2 cups)

Tapioca Vada (kizhangu vada)

Tapioca 1/2 kg
Onion 1 finely chopped
Cinnamon 1 inch
Cloves 2
Fennel seeds 1 spn
Red chillies 5
Ginger 1 inch
Curry leaves few
Salt as required
Hing 1 pinch
Oil for deep frying

Remove the skin from tapioca and cut into small pieces
Grind tapioca, cinnamon, cloves, red chillies, ginger without water
Mix onions, curry leaves, fennel seeds,salt, hing โ€ฆ
Mix well
Make small balls
Flatten with hands and fry in oil until it turns golden brownโ€ฆ

Double Dhal Tadka

Toor dhal half cup
Channa dhal half cup
Ghee 4 spn
Tomato 1 and half to two
Onion 1 finely chopped optional
Turmeric 1/4 spn
Chilli powder 1 spn
Dry Methi leaves 1/4 spn
Jeera 1/2 spn
Mustard and urad dhal mix 1/4 spn
Curry leaves few
Dry red chillies 2
Ginger 1/2 inch grated or crushed
Hing 1 pinch
Salt as required

Pressure cook both dhal with 1:2 cup water with a spoon of ghee, turmeric, hing and ginger
Mash well once its done

Heat a pan
Add 2 spn of ghee
Add jeera then onion fry well
Add in tomatoes fry until it becomes soft
Add chili powder, crushed dry methi salt and a cup of water
Let it boil
Add mashed dhal
Let it cook for few more minutes in medium flameโ€ฆ

Heat another pan
Add a spn of ghee
Add mustard urad dhal
Add curry leaves and red chillies
Fry well
Add it to the dhalโ€ฆ

Nei Appam (ghee appam)Karthigai deepam special ๐Ÿ’ฅ๐Ÿ’ฅ

Raw rice (pacharisi) 1 cup
Jaggery 1 cup
Coconut 1/4 cup grated
Salt a pinch
Cardamom powder 1/4 spn
Ginger grated 1 spn
Baking soda 3 pinches
Ghee as required

Soak raw rice for 3 hrs(minimum)

Grind rice, jaggery, coconut together with little until fine paste..
Mix other ingredients
Take paniyaram pan apply ghee
Pour the batter
Flip once its done one side
Apply ghee on the other side
Cook until golden brown

Its delicious and healthy ๐Ÿ˜Š

Pasta Cheese Casserole

Pasta 250 g (I used penne pasta)
Pasta Tomato sauce store bought
Can replace with pesto or any other sauce
Mozzarella 2 cups
Pepper crushed 1 spn optional
Salt as required
Olive oil 1 spn

Take a bake oven safe pan
If not in a regular pan
Boil water
Add pasta and olive oil little salt too
Cook 60%
Drain water
Add tomato sauce
Mix well
Add in pepper and salt if required
Switch off the flame

Preheat oven 350 deg
Add mozzarella on top of the pasta
Cover and bake for 15 to 20 mins

Serve hot ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Palak Paneer

Spinach 1 bunch
Paneer cubes 1 cup
Onion 1 finely chopped
Tomato 2 finely chopped
Turmeric 1 pinch
Corriander powder 1 spn
Salt as required
Ghee 3 spn
Green chillies 5
Cardamom 1
Cloves 2
Whole pepper 1 spn
Jeera 1 spn
Cinnamon 1 inch
Dry methi 1 pinch
Milk 1/4 cup

Boil paneer cubes in hot water
Keep it in the hot water until adding paneer in the gravy

Heat a pan
Add little ghee
Fry cardamom, cloves, whole pepper, cinnamon, jeera
Grind as coarse
Keep aside

In the same pan add spinach
Fry until water evaporates
Cool completely
Grind with green chillies

In the same pan add a spn of ghee
Add onions
Fry well
Add turmeric and corriander powder
Fry for few minutes
Add in tomatoes
Add crushed methi leaves
Fry until tomato turns mushy
Add spinach paste
Cover cook until oil separate from gravy
Add paneer cubes
Add in milk
Mix well
Finally add grind powder
Cook for few minutes

Serve with roti or pulavโ€ฆ

Besan Curry for Idli Dosa Poori

Onion 1
Tomato 1
Oil 1 spn
Mustard 1/2 spn
Urad dhal 1 spn
Curry leaves few
Green chilies 3
Turmeric 1/4 spn
Besan (kadalai mavu) 1/2 cup
Salt as required
Sugar 1/4 spn optional
Lemon juice 1/4 spn
Corriander leaves few

Heat a pan
Add oil then mustard urad dhal
Once splutter add curry leaves
Green chilies fry
Add onions fry until translucent
Add in tomatoes fry well
Add salt and turmeric
Add besan flour fry in low flame for few mins
Add water now .. not too much water (2cups enough)
Cook in medium flame for 2 mins
Adjust salt
Add sugar and lemon juice
Switch off the flame
Garnish with coriander leaves

Tomato Thokku

Tomato 6
Curry leaves few
Turmeric 1/2 spn
Chilli powder 2 spn
Sambar powder 2 spn
Salt as required
Hing 1/4 spn
Mustard and urad dhal 1 spn
Fenugreek powder 1 spn
Jaggery 1 spn
Sesame oil 3 to 4 spn

Heat a pan
Add sesame oil
Add mustard, hing and curry leaves
Add in tomatoes
And spice powders and salt too
Cook well until tomatoes cooked well
Once oil started separating from gravy add fenugreek powder and jaggery powder
Cook for few mins

Yummy thokku ready
Goes with idli dosa rice roti even with bread too ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ˜‹

Chapathi with Shahi Paneer

Paneer 1 cup cubed
Onion 1
Tomato 3
Ginger 1 inch
Green chilies 3
Butter or ghee 2 spn
Black elachi 1
Chilli powder 1 spn
Garam masala 1 spn
Turmeric 1/4 spn
Tomato sauce or puree 2 spn
Milk 1 cup
Cream 1/2 cup
Corriander leaves for garnishing

Heat a pan
Add a spn of ghee
Add elachi, green chilies, ginger, and onion
Fry until onion turns translucent
Add tomatoes fry until mushy
Cool completely
Make it as smooth paste
Add the paste in the pan
Add one more spn of ghee and add all spice powders and salt
Add tomato sauce too
Fry until the masala get cooked well
Add paneer cubes fry for 2 to 3 mins
Pour the milk slowly and the cream as well
Cook 3 to 4 mins just the milk get warm
No need to boil
Garnish with corriander leaves
Adjust milk for the consistencyโ€ฆ
No waterโ€ฆ,
