Brinjal Peanut Rice

Brinjal 5 to 6
Onion 1 finely chopped
Ginger garlic grated 1 spn
Turmeric 1/4 spn
Cooked rice 4 cups
Hing 1 pinch
Salt as required
Oil as required
Ghee 2 spn

For roast and grind

Corriander seeds 2 spn
Jeera 1 spn
Whole pepper 1 spn
Red chillies 6 to 7
Peanut 3 spn

Heat s spn of oil in a pan
Add the items for roast and grind
Fry until nice aroma comes
Let it cool down completely
Grind coarsely with hing

Cut the brinjals and put it in salt water

Heat ghee
Add onions fry until golden brown
Add brinjals
Add turmeric too
Cook in medium flame until brinjal 70% cooked
Add the masala powder
Add salt
Fry for few mins
Add cooked rice
Mix gentlyโ€ฆ

Tiramisu Hide and Seek Flavor โ€ฆ

Ladies finger biscuits 1 pack
Mascarpone cheese 1 cup
Heavy whipping cream 250g
Vanilla extract 1 spn
Sugar 1 cup adjust if u want
2 cups espresso or STRONG coffee at room temperature (i used instant nescafe)
Cocoa powder for dusting on top ( i used hide and seek choco chip biscuits crushed on the top)

Beat whipping cream, sugar, and vanilla until soft peaks form.
Add in mascarpone cheese and continue to whip to stiff peaks.
Dip lady fingers in coffee and place in an pan to make the first layer
Don’t let them soak as the will fall apart, just a quick dunk in the coffee is enough.
Spread half of the whipped cream mixture on top of first layer of lady fingers. Repeat process with second layer of lady fingers and cream mixture.
Dust the top of dessert with cocoa powder or biscuit powder using a sieve. Refrigerate for about 2-4 hours (it gets even better in the fridge)

Raw Banana Fry (Vazhaikai Varuval)

Raw banana 2
Oil 3 spn
Chilli powder 2 spn
Fennel seeds powder 1 spn (sombu podi)
Garam masala 1 spn
Turmeric 1/2 spn
Hing 1/4 spn
Salt as required
Curry leaves few

Peel the banana skin and cut into cubes
Heat oil in a pan
Add all spice powders and salt
Fry in low flame for few mins
Add in diced raw banana
Add curry leaves
Mix well
Cover and cook in medium flame until 70% cooked
Open ad fry until it becomes golden brown and little crispy

Slow Cooker Mixed Veg Gravy

Mixed veggies 1 to 2 cups
Chilli powder 1 spn
Corriander powder 1 spn
Garam masala 1 spn optional
Whipped Cream 1/2 cup optional
Salt as required

To grind..
Onion 1 small size
Cinnamon 1 inch
Fennel seeds 1 spn
Poppy seeds 1 spn
Coconut 1/2 cup

Grind all ingredients in the to grind items with some water
Put all the ingredients in the slow cooker
All little water
Check the salt
Cook high for 4 hrs
Slow for 8 hrs

Just make sure there is no raw smell โ€ฆ

Beetroot Halwa

Finely grated beetroot 2 cups
Sugar 1/2 to 1 cup
Milk 2 cups
Ghee 3 spn
Cashew , raisins few
Elachi 3 ( crush finely)

Heat a heavy bottom or nonstick pan
Add a spoon of ghee
Add cashew and raisins
Fry well and keep aside
In the same pan add grated beetroot
Fry until raw smell leaves from it
Add milk and cook well Until the milk evaporates
Add sugar in this stage
Cook again
U will get a thick consistency
Add fried cashews raisins and crushed elachi and ghee
Mix well for few minutes
Serve hot โ€ฆ.

Simple Egg Gravy…

Simple Egg Gravy…

Eggs 4
Cinnamon 1 inch
Fennel seeds 1 spn
Curry leaves few
Oil 2 spn
Onion 1

To grindโ€ฆ
Coconut grated 3 spn
Fennel seeds 1 spn
Garlic 5 pods
Whole pepper 1 to 2 spn
Tomato 2
Chilli powder 1 spn
Turmeric 1/2 spn
Corriander powder 3 spn

Boil eggs and peel the skin
Cut eggs into half (can use whole eggs too.. )
Grind the ingredients for masala (all items in the to grind section)

Heat oil in a pan
Add cinnamon, fennel seeds, curry leaves
Fry for few seconds
Add thinly sliced onions
Fry until translucent
Add the grounded masala
Add in salt and required water
Let it boil until the raw smell goes off
Add the boiled eggs
Keep the flame in medium for few minutes..
Garnish with coriander leavesโ€ฆ

Serve with rice , chapati, idli or dosaโ€ฆ

Multigrain Muruku

Multigrain flour 2 cups
(I used manna health mix)
Chilli powder 4 to 5 spn
Ajwan 1 spn(omam)
Sesame seeds 2 spn optional
Salt as required
Hing 1/4 spn

Mix everything well like chapati dough by adding water little by little..
Mix the dough well not too tight
Like muruku dough consistency
Heat oil for frying
Make muruku’s with desired shape..
Fry until fully cooked…

(Add any healthy flour to make this muruku )

Mushroom Biriyani (instant pot)

Mushroom 1 cup
Biriyani rice(seeraha samba)or basmati rice 2 cups

Oil 2 spn
Ghee 2 spn
Biriyani spices (cinnamon, cloves, star anise, cardamom, other spices if u wish)
Chilli powder as per taste
Turmeric powder 1/4 spn
Curd 2 spn
Salt

For biriyani paste..

Onion 1
Tomato 1
Ginger 1 inch
Garlic 4 pods
Green chilies 4 to 5
Corriander leaves 1 hand full
Mint leaves 1 hand full
Grind all together and make as paste

Start instant pot
In saute mode add oil once the pot is hot
Add all biriyani spices
Fry well until nice aroma comes out
Add biriyani paste
Fry until raw smell leaves
Add curd ..
Add in mushrooms and chili powder and turmeric salt..
Cook for few mins
Add rice and required water
If the gravy is watery add 1 and half cup water..
Check salt and spice levels..
Add ghee now.. which is optional..
Close the ip lid
Choose rice mode
Cook in normal mode (12 mins which is automatic)
Once done release the pressure manually or wait until the pressure is down..
Mix gently..
Biriyani is ready nowโ€ฆ

The seeraha samba rice gives nice texture to the biriyani.. can replace it with basmati rice too..

Serve hot with raita or desired gravyโ€ฆ

Cauliflower Roastโ€ฆ

Cauliflower 1
Onion 2 thinly sliced
Tomato 1
Ginger garlic finely chopped 1 spn each
Chilli powder 2 spn
Turmeric 1/4 spn
Chicken masala 1 spn optional (garam masala can be used instead of this)
Salt as required
Cinnamon 1 inch
fennel seeds 1 spn
Oil 2 spn
Corriander leaves for garnishing..

Cut and clean cauliflower and keep aside
Heat oil in a pan
Add in cinnamon and fennel seeds
Add ginger and garlic fry for few seconds
Add in onions fry well until translucent
Add in spice powders fry for a minute
Add tomatoes followed by cauliflower..
Add salt too
Cover and cook in low flame
No need to add water
Once 70% cooked remove the lid
Cook in high flame for few minutes until it turns dry n roast..
Garnish with coriander leaves..

Perfect combo for chapati or any variety rice โ€ฆ can use this roast for cauliflower masala dosa tooโ€ฆ

Peanut Chaat..

Peanuts 1 cup
Onion 1 chopped
Tomato 1 chopped
Raw mango 1/2 finely chopped
Chilli powder 1 spn
Chaat masala 1 spn
Salt as required
Corriander leaves for seasoning
Lemon juice 1 spn

Pressure cook peanuts with enough water
Drain the water
Mix all the ingredients in a bowl..
Adjust spice and tanginess..
